When I told my wife I was making avocado toast, she jokingly said "How are we going to pay for our house?" Well, if you make it at home, it's much cheaper lol.
Actually the reason I decided to make avocado toast is because I had some leftover sourdough bread from making grilled cheese earlier this week. I also had a couple of avocados ripening in my rice bin, so it just made sense.
There are so many ways to make avocado toast, but every single version that I love always includes eggs in some form. At one point I used to like poached eggs on my avocado toast, but it got way too messy for me. So now I just boil the eggs until they are not runny. Much less messy, but I'll admit, I do miss the taste of runny yolks.
For this recipe, I kept it super simple. The only seasonings you need are salt, black pepper, and red pepper flakes. If you want to spice it up, you can add a drizzle of sriracha as well.
I remember when my wife and I first moved in together we had an avocado toast phase for at least a month. We put basically everything we could find on top of them- bacon, tomatoes, mayo, cheese.. the list goes on. I don't think I've ever had one that I didn't like either. You can't go wrong with toast and avocados!
Key Ingredients

Avocados: I used 3 medium avocados. A cool trick I've learned for ripening them quickly is to bury them in a rice bin. The rice will trap the ethylene gas around them and make them ripen faster.
Eggs: I used 3 hardboiled eggs. To hardboil them, bring a pot of water to a boil. Add the eggs, cover, reduce to low heat, and cook for 12 minutes.
Lemon juice: Freshly squeezed is a must. I used 1 tablespoon, but u can add more to your own taste. I personally like the avocado mixture to be a bit sour.
Sourdough bread: Nothing like a slice of high-quality sourdough, pan-fried in olive oil. If your sourdough is dry, you can spritz it with some water and then microwave for 15 seconds. Or steam it on the stovetop for 10 seconds.
Olive oil: For frying the sourdough; you can drizzle more on top as well.
Seasonings: Salt, black pepper, and red pepper flakes.
Instructions

STEP 1: Mash the avocados in a medium bowl. Add the eggs and lemon juice and mix until combined.

STEP 2: Grill your bread with olive oil on a pan.

STEP 3: Spread the avocado mixture on the bread and season with salt, black pepper, and red pepper flakes. Enjoy!

Avocado Toast (with Egg)
Ingredients
- 3 medium avocados
- 3 hard-boiled eggs (chopped)
- 1 tablespoon fresh lemon juice
- 2 slices sourdough (or your favorite bread)
- extra virgin olive oil, salt, black pepper, and red pepper flakes to taste
Instructions
- Cut the avocado in half and remove the pit. Scoop the flesh into a small bowl. Mash with a fork.
- To the bowl of avocado, add the chopped eggs and lemon juice. Stir to combine.
- Drizzle olive oil over the bread slices and grill until golden.
- Spread the avocado and egg mixture over each piece of toast.
- Season with salt, black pepper, red pepper flakes, and more olive oil if desired. Enjoy!
