Avocado Toast (with Egg)
I love adding hardboiled eggs to my avocado toast. It makes it more satisfying!

- 3 medium avocados
- 3 hard-boiled eggs (chopped)
- 1 tablespoon fresh lemon juice
- 2 slices sourdough (or your favorite bread)
- extra virgin olive oil, salt, black pepper, and red pepper flakes to taste
Cut the avocado in half and remove the pit. Scoop the flesh into a small bowl. Mash with a fork.
To the bowl of avocado, add the chopped eggs and lemon juice. Stir to combine.
Drizzle olive oil over the bread slices and grill until golden.
Spread the avocado and egg mixture over each piece of toast.
Season with salt, black pepper, red pepper flakes, and more olive oil if desired. Enjoy!
