    About This Recipe

This green goddess dressing is the perfect all-purpose dressing for the summer. It's herby, it's creamy, and it's so good drizzled over salads, used as a dip for veggies, or dolloped onto grain bowls and wraps. And the best part? It comes together in minutes with whatever fresh herbs you have on hand. Parsley is the base, but from there you can mix and match whatever you have in your fridge. Try it with basil, dill, tarragon, cilantro, or mint! The options are endless.

For me, I love using this dressing to dress up a simple salad with lettuce, avocados, and tomatoes. I even throw in some candied pecans/walnuts for extra crunch. If you want some protein, you can try adding a baked salmon filet or chopped boiled eggs! Healthy and delicious.

    Key Ingredients

    ingredients prepped in bowls.

I make this dressing in a food processor so the herbs get finely chopped and everything emulsifies into a smooth, creamy sauce. It takes just a few minutes to blend together, and these simple ingredients make it vibrant and full of flavor:

Greek yogurt: This is the base of the dressing. I use 0% fat to keep things healthy. Make sure you use unflavored Greek yogurt, as we do not want any sweet/fruity flavorings.

Fresh parsley: The star of the show. It gives the dressing that gorgeous green color. Make sure you're using fresh parsley here and not dried. Dried parsley doesn't have nearly the same freshness or flavor.

Mixed fresh herbs: This is where you can have a little fun. You can use any of your favorite herbs, like basil, tarragon, dill, cilantro, or mint. Use whatever combination you love, or whatever is looking good at the market. A mix of two or three herbs works the best.

Chives or green onions: Add a mild oniony flavor that rounds everything out without overpowering the herbs.

Fresh lemon juice: Makes it tangy and bright. Start with 2 tablespoons and add more to taste- the acidity really makes all the flavors pop.

Extra-virgin olive oil: Adds richness and helps the dressing come together smoothly. Use a good quality extra-virgin olive oil for the best flavor.

Garlic: Adds a little bit of bite. Keep it to one clove only, as we don't want it to overpower the herbs.

Salt and black pepper: Add to your own taste, and always taste and adjust the seasoning before serving.

    Instructions

all ingredients blended together in food processor.

STEP 1: In a food processor, combine the Greek yogurt, herbs, lemon juice, olive oil, garlic, salt, and pepper. Pulse until completely smooth.

STEP 2: Taste and add more salt, lemon juice, or herbs as needed. Transfer to an airtight jar or container and refrigerate until ready to use. The dressing will thicken slightly as it chills.
