    Banana Pancakes

    These healthy 3-ingredient Banana Pancakes are my new favorite breakfast! They're super easy, naturally sweet, and packed with banana flavor and protein. Made with just bananas, eggs, and flour (or oats), they're perfect for toddlers and kids! Bonus: they only take 15 minutes to make!

    About This Recipe

    This banana pancake recipe is one of the easiest breakfasts around, and if you ask me, it's also one of the best.

    • It's easy and quick. Just mix three common pantry ingredients together and then cook the pancakes on a hot skillet.
    • It's flavorful. Sweet, caramelized banana flavor infused into soft, golden pancakes.
    • And it's a healthy breakfast option! Packed with protein from eggs and potassium from bananas.

    I seriously am in love with this recipe. I always have overripe bananas lying around, so it's been a lifesaver for using them up. Because there is no added sugar, overripe bananas are key. I usually make this a few days after I buy bananas from the grocery store so they're nicely bruised and sweet by the time I use them.

    Key Ingredients

    Bananas: I used 2 large ripe bananas. As I said earlier, the riper the banana, the better.

    Eggs: You'll need 4 large eggs.

    Flour: I used all-purpose flour. For a healthier option, you can easily swap it with whole wheat flour. For a gluten-free option, you can use either oat flour or grind your own oats.

    Optional: Some cinnamon to give it a warm, cozy flavor.

    STEP 1: In a medium mixing bowl, mash the bananas until smooth (I used a potato masher).

    STEP 2: Add the eggs and mix until combined.

    STEP 3: Whisk in the flour and optional cinnamon.

    STEP 4: Heat a greased skillet over medium heat. Add ¼ cup of batter and cook until the edges are dry and bubbles begin to form on the surface, 2 minutes. Flip and cook for another 1-2 minutes until golden brown.

    Pro tip: Add a little bit of oil between each pancake. I noticed that these pancakes tend to stick more if you don't grease the pan between each pancake. I think it's because there isn't as much flour as other recipes.

    • Heat greased skillet over medium heat. Pour in ¼ cup of batter and cook until the edges appear dry and bubbles form on the surface, 2 minutes. Flip and cook for another 1-2 minutes until golden brown.
    • Serve with your favorite pancake toppings!

      Can you sub something for the eggs?
      Flax, applesauce???

        I think apple sauce would work well. A long time ago I used to sub apple sauce for eggs when I made cake. Im not sure of the exact proportions though since I've never tried it with the recipe. Maybe 1/4-1/3 cup apple sauce per egg?
