What I love about autumn is how the internet suddenly fills up with soup recipes. Everywhere you look, someone is making a soup. And my house is no different. Suddenly, my meal rotation includes a soup every week. So get ready for a bunch of soups to come out! 😀
My hamburger soup is basically: 2 pounds of ground beef, a can of tomato paste, vegetables, and beef broth. The tomato paste thickens the soup, and the beef broth gives it a hearty base. My definition of a wholesome meal is savory, not too fatty, filling, and complete with protein, carbs, and veggies. This soup is exactly that!
This is a perfect, simple soup to feed your family. The leftovers are great for meal prep for 3-5 days (depending on how many people you have to serve).
Key Ingredients

Ground beef: I recommend lean ground beef to be healthier. If you use regular ground beef, make sure to drain away some of the fat after cooking the beef with the onions.
Onions & garlic: These provide the aromatic base of the soup. Feel free to add extra onions or garlic if you want!
Olive oil: For sauteeing the beef, onions, and garlic.
Tomato paste: Provides acidity and thickens the soup slightly.
Beef broth: I used Campbell's "no salt added" beef broth. I prefer it with no salt, so I can add the salt myself.
Seasoning: Worcestershire sauce, Italian seasoning, a tiny bit of sugar, salt, and black pepper. The amount of salt you need depends on how salty your beef broth is. I typically use 1-2 teaspoons.
Potatoes: I am not too picky about the potatoes I use in soup recipes. Today I used yellow potatoes, which are more waxy, but I've used Russets and red potatoes in the past with no issues.
Mixed vegetables: Use any variety you like. My package had carrots, peas, and corn. If you like green beans, you can include those too. Feel free to add more than 3.5 cups as well.
Instructions

STEP 1: Heat the olive oil in a large pot over medium-high heat. Add the beef, onions, and garlic. Cook for 8-9 minutes until the beef is no longer pink.

STEP 2: Add the tomato paste, beef broth, Worcestershire sauce, Italian seasoning, and sugar. Bring to a boil, then reduce to a simmer and cook for 10 minutes.

STEP 3: Add the potatoes and frozen mixed vegetables. Bring back to a simmer and cook for another 10-15 minutes until the potatoes are tender. Season with salt and pepper to taste.

- 4 cloves garlic minced
- 1 (6-ounce) can tomato paste
- 6 cups beef broth (or chicken broth)
- 1 tablespoon Worcestershire sauce
- 1 tablespoon Italian seasoning
- ½ teaspoon sugar
- 2 medium potatoes (½-inch cubes)
- 3 ½ cups frozen mixed vegetables
- salt and pepper (to taste)
Instructions
- Heat the olive oil in a large pot over medium-high heat. Add the beef, onions, and garlic. Cook for 8-9 minutes until the beef is no longer pink.
