This easy hamburger soup recipe is easy to make and can feed a family of 8 (great for leftovers and meal prep for smaller families!). Made with ground beef, mixed vegetables, and beef broth, it's warm, cozy, and so comforting in the colder months.
Heat the olive oil in a large pot over medium-high heat. Add the beef, onions, and garlic. Cook for 8-9 minutes until the beef is no longer pink.
Add the tomato paste, beef broth, Worcestershire sauce, Italian seasoning, and sugar. Bring to a boil, then reduce to a simmer and cook for 10 minutes.
Add the potatoes and frozen mixed vegetables. Bring back to a simmer and cook for another 10-15 minutes until the potatoes are tender. Season with salt and pepper to taste (I usually add about 1-2 teaspoons of salt, but it will depend on how salty your beef broth was).
