Hamburger Soup

This easy hamburger soup recipe is easy to make and can feed a family of 8 (great for leftovers and meal prep for smaller families!). Made with ground beef, mixed vegetables, and beef broth, it's warm, cozy, and so comforting in the colder months.

  • Heat the olive oil in a large pot over medium-high heat. Add the beef, onions, and garlic. Cook for 8-9 minutes until the beef is no longer pink.
  • Add the tomato paste, beef broth, Worcestershire sauce, Italian seasoning, and sugar. Bring to a boil, then reduce to a simmer and cook for 10 minutes.
  • Add the potatoes and frozen mixed vegetables. Bring back to a simmer and cook for another 10-15 minutes until the potatoes are tender. Season with salt and pepper to taste (I usually add about 1-2 teaspoons of salt, but it will depend on how salty your beef broth was).
