Banana Pancakes

Ingredients
  

  • 2 medium-to-large ripe bananas
  • 4 large eggs
  • ½ cup all-purpose flour (or whole wheat flour, oat flour, or ground oats)
  • ½ teaspoon cinnamon (optional)

Instructions
 

  • In a medium mixing bowl, mash the bananas until smooth. Add the eggs and mix until combined.
  • Whisk in the flour and cinnamon.
  • Heat greased skillet over medium heat. Pour in ¼ cup of batter and cook until the edges appear dry and bubbles form on the surface, 2 minutes. Flip and cook for another 1-2 minutes until golden brown.
  • Serve with your favorite pancake toppings!
