    Easy Blondies

    These Blondies are chewy and fudgy on the inside with an addictive crisp on the outside! My favorite pieces are the edge slices because they have extra crispy parts. Made with simple pantry ingredients, this recipe is easy to make and ready in just 35 minutes.

    About This Recipe

    By request: my easy blondie recipe! I had two people ask on Pinterest whether I had a blondie recipe, and while I've made them many times, it was never added to my blog- until now! So here we are.

    Blondies are basically just the cocoa powder-free version of brownies- they're made in exactly the same way, just without the cocoa powder. But unlike brownies, people like to add mix-ins, such as hazelnuts, chocolate chips, or dried fruit, which gives them more variety in texture and flavor.

    Texture is so important in blondies. You want the inside to be chewy, fudgy, and moist, while the outside should be lightly crisp. This is accomplished through the ratio of ingredients, of course, but also the time in which you bake them. A longer bake will yield more crumbly and dry blondies, while a shorter bake will yield fudgier and moister blondies.

    When I make blondies, I take them out just as the edges are turning golden brown. Since the edges cook the fastest, this means the center is still slightly underbaked- which, to me, is the perfect texture of fudgy and chewy.

    Key Ingredients

    All-purpose flour: As always, please measure the flour by spooning it into the measuring cup and levelling it off with a knife. This will ensure you get the most accurate measurement, as scooping directly from the flour bag will compact the flour and cause you to overmeasure.

    Baking powder: Just a little bit makes the blondies less dense.

    Butter: I use melted, UNSALTED butter, and then add salt myself. If you use salted butter, you can skip the salt.

    Brown sugar + granulated sugar: I like to use a combination of these sugars. But feel free to use only brown sugar if you prefer a more molasses flavor.

    Eggs: For binding the ingredients together.

    Vanilla extract: For flavor.

    Mix-ins: You can use any mix-in of your choice, whether that's chocolate chips, nuts, or dried fruit.

    STEP 1: In a medium bowl, whisk the flour, baking powder, and salt together.

    STEP 2: In a large bowl, whisk the butter, sugars, eggs, and vanilla extract.

    STEP 3: Add the dry ingredients to the wet mixture and stir until just combined.

    STEP 4: Fold in 1 cup of the mix-ins.

    STEP 5: Scrape the batter into the prepared dish and smooth out the top. Sprinkle the remaining mix-ins on top.

    STEP 6: Bake for 25-30 minutes until the edges are golden brown. A toothpick inserted into the center should come out with just a few crumbs. Remove from the oven and cool the blondies in the pan for at least 20 minutes before slicing.

    Ingredients
      

    • 2 cups all-purpose flour (spooned and levelled)

    Instructions
     

    • Preheat your oven to 350°F. Lightly grease a 9x13 baking dish. Line the dish with parchment paper, leaving an overhang on two sides to make removing the blondies easier.
    • In a medium bowl, whisk the flour, baking powder, and salt together.
    • In a large bowl, whisk the butter, sugars, eggs, and vanilla extract. Add the dry ingredients to the wet mixture and stir until just combined.
    • Fold in 1 cup of the mix-ins.
    • Scrape the batter into the prepared dish and smooth out the top. Sprinkle the remaining mix-ins on top.
    • Bake for 25-30 minutes until the edges are golden brown. A toothpick inserted into the center should come out with just a few crumbs. Remove from the oven and cool the blondies in the pan for at least 20 minutes before slicing.
