    Tortilla Pizza

    This crispy Tortilla Pizza is the perfect lunch/dinner or late-night snack. Kids love it, and it's incredibly easy to make and ready in only 5 minutes. You can put any toppings you want on it, but I love classic marinara sauce with pepperoni and cheese.

    About This Recipe

    Sometimes you want pizza, but you're too broke to have a pizza place do it, and you also don't want to make your own pizza dough, then you can make a version with a tortilla! It's super easy and the results are amazing. You get a super crispy, thin crust that tastes like your favorite thin-crust pizza, and it's ready in just 5 minutes!

    Growing up, I used to make tortilla pizzas whenever my parents were at work. Funnily enough, my parents owned a pizza restaurant when we were kids. I used to ask them to bring pizza sauce and toppings home for me, and then I would make tortilla pizzas while they were working.

    Back then, I used to do it in my toaster oven, but now I've realized the best way is to use a cast-iron skillet to get a crispy bottom. My recipe involves two steps. First, cooking it on the cast iron, then broiling for a few minutes. The results are fantastic. You could also air-fry this at 400°F for 4-5 minutes.

    Key Ingredients

    Tortilla: I use an 8-inch tortilla because it can lie flat in my cast-iron pan. If you have a bigger cast-iron, feel free to use a larger tortilla.

    Olive oil (or any high smoke point oil): Helps the bottom of the tortilla crisp up.

    Pizza sauce: I just used canned pizza sauce for this recipe. Marinara sauce would work as well.

    Mozzarella: Mozzarella cheese is the best cheese for pizza because it melts the best.

    Toppings: I used pepperoni slices, but you can use whatever you want. Make sure not to overfill the tortilla, otherwise, it won't get as crispy. And if you use mushrooms, make sure you grill them first, otherwise the pizza will get really soggy.

    Instructions

    STEP 1: Preheat your cast iron until hot. It should be hot but not anywhere close to smoking. If it's too hot, the tortilla will burn.

    STEP 2: Brush the bottom of the tortilla with olive oil and place it on the skillet.

    STEP 5: Place in the oven and broil for 2-3 minutes until the cheese is melted and lightly browned.

    STEP 6: By now, the bottom should be crisp and golden. If not, place it back on the stove for a few more minutes. Enjoy!

    Ingredients
      

    • 1 (8-inch) tortilla
    • ½ teaspoon olive oil
    • 2 tablespoons pizza sauce
    • ¼ cup shredded mozzarella
    • toppings (whatever you want; i used pepperoni slices)

    Instructions
     

    • Preheat your broiler to 450°F and set the rack in the upper-middle position.
    • Heat a cast-iron skillet over medium heat until hot. It should be hot but not anywhere close to smoking. If it's too hot, the tortilla will burn. Reduce the heat to low.
    • Brush oil over the tortilla and place it into the skillet with the oil side down.
    • Spread the pizza sauce, followed by mozzarella cheese, and whatever toppings you want.
    • Place in the oven and broil for 2 minutes until the cheese is melted and lightly browned. By now, the bottom of the tortilla should be golden and crisp. If not, place it back on the stove for a few minutes.
