Tortilla Pizza

This tortilla pizza is crispy, golden, and incredibly easy to make.

Ingredients
  

  • 1 (8-inch) tortilla
  • ½ teaspoon olive oil
  • 2 tablespoons pizza sauce
  • ¼ cup shredded mozzarella
  • toppings (whatever you want; i used pepperoni slices)

Instructions
 

  • Preheat your broiler to 450°F and set the rack in the upper-middle position.
  • Heat a cast-iron skillet over medium heat until hot. It should be hot but not anywhere close to smoking. If it's too hot, the tortilla will burn. Reduce the heat to low.
  • Brush oil over the tortilla and place it into the skillet with the oil side down.
  • Spread the pizza sauce, followed by mozzarella cheese, and whatever toppings you want.
  • Place in the oven and broil for 2 minutes until the cheese is melted and lightly browned. By now, the bottom of the tortilla should be golden and crisp. If not, place it back on the stove for a few minutes.
