    Scotch Eggs

    Scotch Eggs are a British dish made with boiled eggs, coated in a layer of savory meat, breaded, and deep-fried. They might seem intimidating, but they're actually super easy to make at home.

    About This Recipe

    A few years ago, my wife and I went to a Renaissance fair in Seattle. There was a bunch of overpriced food stalls everywhere, but tucked away at the end was this little booth selling nothing but scotch eggs and hot dogs. They were only $4 each and way cheaper than paying $22 for some random dude's tacos, so we decided to go there.

    It was my first time having a scotch egg, and might I say it was delicious! It's been a while, but I've been meaning to make them ever since. This week, I finally decided to make them since we're doing our yearly freezer cleaning recipes, and I found a bag of frozen sausages that had been in there for god knows how long.

    The process is actually quite simple! All you do is boil the eggs, wrap the eggs in meat, coat them in breadcrumbs, and then deep-fry. I found that using plastic wrap to shape the meat around the egg was the best method. At first, I tried using just my hands, but the meat was too difficult to handle.

    Eggs: You can either soft-boil or hard-boil the eggs, but personally, I prefer hard-boiling because I find soft-boiled eggs are harder to peel without breaking the eggs.

    Breakfast sausages: This is my hack for getting a lot of flavor in the meat layer. You can make your own or buy premade ones.

    For the egg wash: You'll need eggs, all-purpose flour, salt, and black pepper.

    Breadcrumbs: I like using Japanese-style panko breadcrumbs because they are larger than regular breadcrumbs, which gives the outside a flakier texture.

    Instructions

    STEP 1: Bring a medium pot of water to a boil. Add the eggs and reduce the heat to low. Cover and cook for 9 minutes for soft-boiled and 12 minutes for hard-boiled. Drain and cover with cold water to cool down. Peel and set aside.

    STEP 2: In a bowl, whisk together the eggs, flour, salt, and black pepper. Add the breadcrumbs to another bowl. Divide the sausage into 5 portions.

    STEP 3: Put a square of plastic wrap on your counter. Put one sausage portion in the center and flatten it into a circle. Place an egg in the center.

    STEP 4: Bunch up the plastic wrap to wrap the sausage around the egg. Peel the plastic wrap to release the egg.

    STEP 5: Dip the egg in egg wash, shake off excess.

    STEP 6: Then roll it in the breadcrumbs until fully coated.

    STEP 7: Deep-fry at 350°F for 4-6 minutes or spray with oil and air-fry at 400°F for 10-12 minutes, flipping once, until golden brown and the meat is cooked through. Transfer to a paper towel-lined plate to drain excess oil. Enjoy!

    Scotch Eggs

    Ingredients
      

    • 5 large eggs
    • 10 ounces breakfast sausage (casings removed)

    For breading

    • 2 large eggs
    • 3 tablespoons all-purpose flour
    • ½ teaspoon salt
    • ½ teaspoon black pepper
    • 1 cup breadcrumbs

    Instructions
     

    • Bring a medium pot of water to a boil. Add the eggs and reduce to low heat. Cover and cook for 12-13 minutes. Drain and cover with cold water to cool down. Peel and set aside.
    • In a bowl, whisk together the eggs, flour, salt, and black pepper. Set aside.
    • Add the breadcrumbs to another bowl.
    • Divide the sausage into 5 portions.
    • Put a square of plastic wrap on your counter. Put one sausage portion in the center and flatten it into a circle.
    • Place an egg in the center and use the plastic wrap to wrap the sausage around the egg. Peel the plastic wrap to release the egg.
    • Dip the egg in egg wash, shake off excess, then roll it in the breadcrumbs until fully coated.
    • Deep-fry at 350°F for 4-6 minutes or spray with oil and air-fry at 400°F for 10-12 minutes, flipping once, until golden brown and the meat is cooked through. Transfer to a paper towel-lined plate to drain excess oil. Enjoy!
