Scotch Eggs are easier to make than you think! Made with store-bought breakfast sausages and a simple breading procedure, they're delicious, savory, and crunchy.
Bring a medium pot of water to a boil. Add the eggs and reduce to low heat. Cover and cook for 12-13 minutes. Drain and cover with cold water to cool down. Peel and set aside.
In a bowl, whisk together the eggs, flour, salt, and black pepper. Set aside.
Add the breadcrumbs to another bowl.
Divide the sausage into 5 portions.
Put a square of plastic wrap on your counter. Put one sausage portion in the center and flatten it into a circle.
Place an egg in the center and use the plastic wrap to wrap the sausage around the egg. Peel the plastic wrap to release the egg.
Dip the egg in egg wash, shake off excess, then roll it in the breadcrumbs until fully coated.
Deep-fry at 350°F for 4-6 minutes or spray with oil and air-fry at 400°F for 10-12 minutes, flipping once, until golden brown and the meat is cooked through. Transfer to a paper towel-lined plate to drain excess oil. Enjoy!
