    Roasted Red Potatoes

    These Roasted Red Potatoes are an excellent side dish for any meal! Seasoned lightly with olive oil, garlic, and herbs, they are crisp on the outside and creamy on the inside. Yes, red potatoes taste amazing when they're baked!

    About This Recipe

    I'll be completely honest, there are days when I eat just roasted potatoes or a tray of frozen French fries for dinner. It's like those "girl dinners" you see on social media, except I like to convince myself it's slightly more sophisticated because at least I turn my oven on. Last week, I even saw someone eat plain pickles straight from the jar and call it dinner.

    These roasted red potatoes are super easy to make. I always do a simple garlic and herb seasoning. They're super delicious and flavorful on their own, but they're also simple enough to pair with basically any main course. I love these as part of a Thanksgiving or holiday spread!

    My wife says my potatoes are always the bomb. She wants me to cook them more often, but as a food blogger, I have way too many recipes I want to share! I don't think you guys would appreciate a blog of straight potatoes. Or maybe you would... Maybe I'll start a potatoes-only blog one day for those of you who are interested lol.

    Key Ingredients

    Red Potatoes: I typically use baby red potatoes, but these bigger ones were on sale this week. I like baby red potatoes more because their skin-to-flesh ratio is much higher, and that means more fiber per bite.

    Olive oil: Helps the potatoes crisp up and the seasonings to stick.

    Garlic: Freshly minced is a must here.

    Seasonings: Salt, Italian seasoning (or dried oregano only), and black pepper.

    Fresh parsley: For garnishing and adding some freshness.

    Instructions

    STEP 1: Chop the potatoes into halves or quarters, depending on size.

    STEP 2: In a large bowl, toss together the potatoes, olive oil, garlic, salt, Italian seasoning, and black pepper.

    STEP 3: Spread the potatoes evenly on the baking sheet.

    STEP 4: Bake for 30-40 minutes, flipping halfway through, until golden brown and crispy.

    Ingredients
      

    • 2 pounds red potatoes (halved or quartered depending on size)
    • 3 tablespoons olive oil
    • 3 cloves garlic (minced)
    • 1 teaspoon salt
    • 1 teaspoon Italian seasoning (or dried oregano)
    • ½ teaspoon black pepper
    • 2 tablespoons chopped fresh parsley (for garnishing)

    Instructions
     

    • Preheat your oven to 425℉ and line a large baking sheet with parchment paper.
    • In a large bowl, toss together the potatoes, olive oil, garlic, salt, Italian seasoning, and black pepper.
    • Spread the potatoes evenly on the baking sheet. Bake for 30-40 minutes, flipping halfway through, until golden brown and crispy.
    • Remove from the oven and garnish with fresh parsley.
