- 2 pounds red potatoes (halved or quartered depending on size)
- 3 tablespoons olive oil
- 3 cloves garlic (minced)
- 1 teaspoon salt
- 1 teaspoon Italian seasoning (or dried oregano)
- ½ teaspoon black pepper
- 2 tablespoons chopped fresh parsley (for garnishing)
Preheat your oven to 425℉ and line a large baking sheet with parchment paper.
In a large bowl, toss together the potatoes, olive oil, garlic, salt, Italian seasoning, and black pepper.
Spread the potatoes evenly on the baking sheet. Bake for 30-40 minutes, flipping halfway through, until golden brown and crispy.
Remove from the oven and garnish with fresh parsley.
