    About This Recipe

I love peanut butter. I guess that's why my dog and I are best friends (don't tell my human best friend that)...

No, but seriously, this peanut butter pie is so ridiculously good. It reminds me of cheesecake, but with a guilty-pleasure amount of peanut butter mixed in. The filling is made with cream cheese, peanut butter, cream, and powdered sugar. It's also no-bake, so you don't need to heat up your oven, which is especially annoying in the hot summers.

My recipe comes together in less than 20 minutes. All you do is make the crust, make the filling, then pour the filling into the crust. I might be oversimplifying it, but it really is that easy. One thing to note is that the pie needs to chill in the fridge for at least 4 hours. During this time, the filling firms up. It also just tastes way better cold.

    Key Ingredients

    ingredients prepped in bowls.

Cream cheese: A high-quality cream cheese, like Philadelphia, is the best. Try to use room temperature cream cheese, as it will be easier to beat with the hand mixer.

Peanut butter: My favorite peanut butter to use is a cheap processed peanut butter, like Skippy or Kraft. They have emulsifiers in them, which give them a superior creamy texture.

Heavy cream: For richness and to make the filling less dense.

Powdered sugar: Of course, we need some sugar. Powdered sugar is used here so that it dissolves into the filling completely without needing to bake the pie.

Roasted peanuts: I love garnishing the pie with roasted peanuts for extra flavor and texture.

Graham cracker crust: You'll need graham cracker crumbs, brown sugar, and melted butter. If you use crackers, you'll need to crush them in a food processor or blender. About 12-14 full crackers are needed.

    Instructions

STEP 1: Mix the graham cracker crumbs, sugar, and melted butter until well combined.

STEP 2: Press firmly with the back of a spoon into the bottom and sides of a pie dish.

cream cheese and powdered sugar being beaten until smooth.

STEP 3: In a large bowl, add the cream cheese and powdered sugar. Starting on low speed, gradually beat the mixture until smooth.

cream, peanut butter, and vanilla beaten into filling mixture.

STEP 4: Add the peanut butter, heavy cream, and vanilla extract. Beat until smooth, scraping the bowl once to incorporate everything.

filling poured into pie crust and chopped peanuts sprinkled on top.

STEP 5: Spoon the mixture into the pie crust. Top with chopped peanuts, then chill in the fridge for at least 4 hours.
