There is always a lot of debate around what the best cookie is. I'm here to tell you that it's an oatmeal cookie with raisins (yes, raisins!). If you're someone who does not like chocolate chips, then these cookies are for you. They have an amazing texture from the oats and are less sweet.
While I wouldn't say these cookies are "healthy", they are loaded with oats, which are full of fiber. They have quite a bit of sugar (as all cookies do), but hey, at least you're getting some fiber, which kind of balances it out. Lol.
I love making cookies from scratch, especially these ones, because they always turn out perfect. Sometimes, cookie recipes can be problematic; either the cookies become too cake-like, or they melt way too much, but these ones always turn out perfect! They're fail-proof!
Key Ingredients

Oats: I recommend using quick oats because they have been steamed and rolled beforehand. Regular oats are fine too, but I do find their texture to be a little tougher.
Raisins: Of course, we need some raisins. I did 1.5 cups, but you can use less or more to your preference.
Butter: I recommend unsalted butter so we can control the salt levels.
Sugar + brown sugar: This combination of sugar gives the cookies the perfect chewy texture.
Eggs: For binding the ingredients together.
Vanilla extract: For flavor.
All-purpose flour: Make sure you spoon and level the flour into the measuring cup for the most accurate measurement.
Cinnamon: Just a little bit adds the perfect spiced flavor.
Baking soda: Help the cookies spread out.
Salt: To bring out all the flavors.
Instructions

STEP 1: In a large bowl, beat the butter, white sugar, and brown sugar until light and fluffy, 2 minutes.

STEP 2: Add the eggs one at a time, mixing well after each, then stir in the vanilla.

STEP 3: In a separate bowl, whisk together the flour, cinnamon, baking soda, and salt.

STEP 4: Add the dry ingredients to the wet mixture and mix on low speed (or gently by hand) until just combined. Stir in the oats until evenly mixed.

STEP 5: Shape the dough into 1.5-tablespoon balls and place them 2 inches apart on the baking sheets.

STEP 6: Bake one tray at a time for 10 to 13 minutes, or until the tops look set but still soft.

Oatmeal Raisin Cookies
Ingredients
- 1 cup unsalted butter (softened; ~225g)
- 1 cup sugar (200g)
- 1 cup brown sugar (firmly packed; ~210g)
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour (spooned and levelled; ~240g)
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- ½ teaspoon salt
- 3 cups oats
- 1 ½ cups raisins
Instructions
- Preheat your oven to 350°F and line 3 baking sheets with parchment paper.
- In a large bowl, beat the butter, white sugar, and brown sugar until light and fluffy, 2 minutes. Add the eggs one at a time, mixing well after each, then stir in the vanilla. Scrape down the bowl if needed.
- In a separate bowl, whisk together the flour, cinnamon, baking soda, and salt.
- Add the dry ingredients to the wet mixture and mix on low speed (or gently by hand) until just combined. Stir in the oats until evenly mixed.
- Shape the dough into 1.5-tablespoon balls and place them 2 inches apart on the baking sheets.
- Bake one tray at a time for 10 to 13 minutes, or until the tops look set but still soft.
- Let the cookies cool on the baking sheet for at least 10 minutes before moving them to a wire rack or plate.
