These are my favorite Oatmeal Raisin Cookies! They're are soft and chewy, and studded with sweet raisins. I've been making this recipe since I was little, and I have to say, it is still one of my favorite cookie recipes.
Preheat your oven to 350°F and line 3 baking sheets with parchment paper.
In a large bowl, beat the butter, white sugar, and brown sugar until light and fluffy, 2 minutes. Add the eggs one at a time, mixing well after each, then stir in the vanilla. Scrape down the bowl if needed.
In a separate bowl, whisk together the flour, cinnamon, baking soda, and salt.
Add the dry ingredients to the wet mixture and mix on low speed (or gently by hand) until just combined. Stir in the oats until evenly mixed.
Shape the dough into 1.5-tablespoon balls and place them 2 inches apart on the baking sheets.
Bake one tray at a time for 10 to 13 minutes, or until the tops look set but still soft.
Let the cookies cool on the baking sheet for at least 10 minutes before moving them to a wire rack or plate.
