    Homemade Pancake Mix (Just add water!)

    Weekday mornings just got easier with this Homemade Pancake Mix! Just add water and make fluffy pancakes in 10 minutes.

    About This Recipe

    Happy Friday! If waking up early this weekend to make pancakes for your family doesn't sound appealing, then this recipe is for you. You can save a lot of time by prepping the pancake mix beforehand, and then simply adding water right before you need them. No eggs. No milk. Just add water. Then pretend you're the kind of person who plans breakfast.

    The pancake mix will stay fresh in the pantry for several months, and makes about 30 pancakes. If you want, you can also use this recipe to make waffles. But for that, I would recommend adding slightly less water, and maybe throwing an egg into the mix for more structure.

    It's funny- every time I post a pancake recipe, I always get a comment asking if the batter can be made ahead of time. You guys really like make-ahead recipes! I get it. Mornings are busy. Especially if you have kids! This recipe is for all those people.

    Key Ingredients

    All-purpose flour: Most of the mix is just flour. To get the most accurate measurement, make sure to fluff the flour beforehand. Spoon it into your measuring cup and level it off with a knife or spatula.

    Instant milk powder: This is the secret to not needing fresh milk for pancakes. I recommend whole-fat milk powder for the richest flavor, but any fat percentage will work.

    Sugar: Of course, we need some sugar for sweetness.

    Baking powder: Gives the pancakes their rise and fluffiness.

    Baking soda: Once water is added to the pancake mix, baking soda will immediately produce bubbles to make the batter light and fluffy.

    Salt: I recommend a fine-grained salt so that it dissolves and disperses into the pancake mix better.

    STEP 1: Whisk together all the ingredients in a large bowl.

    STEP 2: Transfer to an airtight container and store in a cool, dry place for up to three months.

    STEP 3: To make pancakes, whisk 1 cup of pancake mix for every ¾ cup of water.

    STEP 4: Heat a nonstick pan over medium heat. Scoop ¼ cup of batter into the pan and cook for 1-2 minutes until bubbles form on top.

    Ingredients
      

    • 5 cups all-purpose flour (spooned and levelled)
    • 1 cup dry milk powder
    • ⅓ cup granulated sugar
    • 4 tablespoons baking powder
    • 1 teaspoon baking soda
    • 1 ½ teaspoons fine sea salt

    Instructions
     

    • Whisk together all the ingredients in a large bowl. Transfer to an airtight container and store in a cool, dry place for up to three months.

    To make pancakes

    • Whisk 1 cup of pancake mix with ¾ cup of water.
    • Heat a nonstick pan over medium heat. Scoop ¼ cup of batter into the pan and cook for 1-2 minutes until bubbles form on top. Flip and cook for another 1-2 minutes until cooked through.
