    Healthy Apple Oatmeal Pancakes (Flourless & Easy)

    These healthy Apple Oatmeal Pancakes are a great way to level up your pancake game! If you've never had oatmeal pancakes before, they're made with blended oats instead of flour. Just toss everything into a blender and blend for 20 seconds. Plus, there is no added sugar and no flour- they're gluten-free!

    About This Recipe

    I truly believe that any type of "oatmeal" pancake is far superior to regular pancakes. They are more nutritious and I personally like their texture more. They are a little more dense, and they have a bit of a gritty texture, similar to cornbread!

    I had some extra apples lying around from making cinnamon apple overnight oats, which is why I decided to make these apple oatmeal pancakes. They are bursting with fruity apple flavor and sweetness, and they are complimented by the warming flavors of cinnamon and vanilla.

    This recipe is easy to make and uses everyday pantry ingredients, so you have no excuse not to make it! I love serving it with extra stewed apples and maple syrup. Whipped cream, too, if I have it on hand. Feel free to switch it up with whatever your favorite pancake toppings are!

    Key Ingredients

    Apple: We need 1 large apple. Any type of apple will work. Tart ones like Granny Smith are the best.

    Eggs: Two large eggs help bind the ingredients together.

    Oats: I used whole-grain rolled oats.

    Yogurt: I used full-fat Greek yogurt.

    Maple syrup: Add this to your own taste. If you're sugar-adverse, you can easily omit this, and add it as a topping after you cook the pancakes.

    Baking powder: This provides the perfect amount of fluffiness. I used 2 teaspoons. I do not recommend adding more than that because you can start to taste the baking powder.

    Cinnamon + vanilla extract: These pair so well with apples.

    STEP 1: Add all the ingredients to a blender.

    STEP 2: Blend for 20-25 seconds. If the batter is too runny, add more oats and blend again. The batter should be thick enough to hold its shape in the pan, but still spread to form a circle.

    STEP 3: Heat a greased skillet over medium heat and add ¼ cup of batter. Cook until the edges begin to dry, about 2 minutes.

    STEP 4: Flip and cook for another 1-2 minutes until golden brown.

    These gluten-free apple oatmeal pancakes are super easy to make. Just pop everything into a blender then pan-fry. They have no flour and no added sugar. Healthy and delicious. Kid-friendly!

    Ingredients
      

    • 1 large apple (peeled and cored)
    • 2 large eggs
    • 1 cup oats
    • ¼ cup yogurt
    • 2 tablespoons maple syrup
    • 2 teaspoons baking powder
    • 1 teaspoon vanilla extract
    • 1 teaspoon ground cinnamon

    Instructions
     

    • Add all the ingredients to a blender. Blend on medium-high speed for 20-25 seconds until smooth.
    • Heat a greased skillet over medium heat. Add ¼ cup of batter and cook until bubbles begin to form on the surface, about 2 minutes. Flip and cook for another 1-2 minutes until golden brown. Note: if the pancakes are getting brown too fast, turn down the heat slightly.
    • Serve with your favorite pancake toppings. Enjoy!
