This Egg Roll in a Bowl has all the flavors of egg rolls, but without the wrapper and deep-frying. It's an easy one-pan dinner you can make in under 20 minutes. I love serving this with a bowl of freshly steamed rice, but I know a lot of you are keto, so don't feel like you have to.

About This Recipe
The first time I tried egg roll in a bowl, I was surprised by how close it resembled the stir-fries I grew up eating. Although it's an American invention, it has all the attributes of a high-quality, Chinese home-cooked meal!
Firstly, it's a completely balanced main course on its own. It has a protein component and lots of vegetables. This is the style of cooking that my mom did when we were growing up. It has everything you need in one dish.
Second, it tastes amazing with rice! For me, stir-fries are always incredibly flavorful (sometimes too salty on their own). You need some rice to help mellow things down; otherwise, it's just a flavor explosion in every bite.
That said, I know a lot of you are keto or looking for high-protein meals, so I've toned down the seasonings just a bit so that this can be eaten as a complete meal without rice.
This egg roll in a bowl is essentially the filling from inside a spring roll: ground pork, cabbage, onions, etc. It's incredibly easy to put together. The entire recipe is done in one pan, and it's ready in under 20 minutes. For the vegetables, I used coleslaw mix, so I didn't even have to chop cabbage and carrots!
Key Ingredients

Vegetable oil: Just a little bit to help cook the ingredients.
Ground pork: My favorite protein for egg roll in a bowl is ground pork. I think pork tastes better than chicken or beef.
Onions & garlic: These add savory depth.
Coleslaw mix: This is a trick to get all the vegetables without needing to buy them individually and also chop them! It saves you so much time.
Seasonings: Soy sauce, toasted sesame oil, and sugar.
Green onions: For garnishing at the end.
Instructions

STEP 1: Heat a large pan over medium-high heat. When the pan is hot, add 1 tablespoon of oil. Add the pork and cook until no longer pink, 6-7 minutes, using a spatula to break it into small pieces as you go.

STEP 2: Add the onions and garlic, and cook for another 2–3 minutes until the onions soften.

STEP 3: Mix in the coleslaw, and cook for 5-7 minutes, stirring frequently, until the cabbage starts to soften. If there is a lot of moisture, increase the heat to high.

STEP 4: Finally, add the soy sauce, toasted sesame oil, and sugar. Stir well to combine and cook for another 1–2 minutes.

STEP 5: Remove from heat and garnish with green onions if desired.

Loved this so much! I added some chopped mushrooms to the pork and served over white sticky rice. My fiancé devoured it!
