Heat a large pan over medium-high heat. When the pan is hot, add 1 tablespoon of oil. Add the pork and cook until no longer pink, 6-7 minutes, using a spatula to break it into small pieces as you go.
Add the onions and garlic, and cook for another 2–3 minutes until the onions soften.
Mix in the coleslaw, and cook for 5-7 minutes, stirring frequently, until the cabbage starts to soften. If there is a lot of moisture, increase the heat to high.
Finally, add the soy sauce, toasted sesame oil, and sugar. Stir well to combine and cook for another 1–2 minutes.
Remove from heat and garnish with green onions if desired.
