    Easy Pico De Gallo

    Pico De Gallo with fresh tomatoes is one of my favorite summer condiments! It's fresh, chunky, zesty, and tangy. Perfect for dipping with tortilla chips or as a topping in tacos, burritos, and nachos.

    About This Recipe

    Pico de gallo is a type of fresh salsa. The name makes it sound fancy and complicated, but it's actually really simple. All you do is combine a bunch of freshly chopped vegetables (typically tomatoes, onions, cilantro, and jalapeno) with lime juice and some seasonings. Compared to regular salsa, it's a little bit chunkier in texture and always made with fresh ingredients (regular salsas can be made with canned tomatoes).

    Draining your diced tomatoes is key to preventing the pico de gallo from getting too watery and diluting the flavor. I recommend placing the tomatoes in a strainer for 5 minutes before combining with the other ingredients. If you don't like waiting, you can give the strainer a few forceful shakes to get the liquid out immediately.

    I love how versatile pico de gallo is. My favorite way to enjoy it is simply with tortilla chips, but you can use it as a way to add a pop of freshness to grilled meats, burritos, or even rice bowls. Once made, it stays fresh for about a week in the fridge. Great for meal prepping!

    Key Ingredients

    Roma tomatoes: I love Roma tomatoes for salsa because they have a firmer texture than other tomatoes. I also find them sweeter.

    Onion: Any type of onion will work for this recipe. Personally, I enjoy yellow or white onions the most because they are sweeter.

    Jalapeno: Jalapeno gives just the right amount of kick. If you are worried about it being spicy, you can leave it out, but really, it is not super spicy. The key to mitigating the spice is to remove the seeds and white pith. That is where most of the heat comes from.

    Cilantro: Chopped cilantro adds so much fresh flavor.

    Lime juice: Freshly squeezed lime juice is a must for salsa. You can even grate some of the zest in for more depth.

    Salt and pepper: All you need is salt and pepper for a delicious pico de gallo.

    STEP 1: Place the diced tomatoes in a strainer and let them sit for 5 minutes to drain off excess liquid. Discard the liquid. Add the tomatoes to a medium bowl along with the rest of the ingredients.

    Easy Pico De Gallo

    This simple pico de gallo is easy to make and full of zesty flavor. I used Roma tomatoes, onion, jalapeno, and cilantro. For less heat, you can remove the jalapeno entirely.

    Ingredients
      

    • 4-5 medium Roma tomatoes (diced)
    • ½ medium onion (finely chopped)
    • 1 medium jalapeno pepper (seeded, piths removed, and finely chopped)
    • ½ cup cilantro (chopped)
    • 2 tablespoons fresh lime juice from 1 lime
    • ½ teaspoon salt
    • ¼ teaspoon black pepper

    Instructions
     

    • Place the diced tomatoes in a strainer and let them sit for 5 minutes to drain off excess liquid. Discard the liquid.
    • Add the tomatoes to a medium bowl along with the rest of the ingredients. Toss to combine.
    • Serve immediately or cover and refrigerate until needed.
