Easy Pico De Gallo
This simple pico de gallo is easy to make and full of zesty flavor. I used Roma tomatoes, onion, jalapeno, and cilantro. For less heat, you can remove the jalapeno entirely.

4-5 medium Roma tomatoes (diced) ½ medium onion (finely chopped) 1 medium jalapeno pepper (seeded, piths removed, and finely chopped) ½ cup cilantro (chopped) 2 tablespoons fresh lime juice from 1 lime ½ teaspoon salt ¼ teaspoon black pepper
Place the diced tomatoes in a strainer and let them sit for 5 minutes to drain off excess liquid. Discard the liquid.
Add the tomatoes to a medium bowl along with the rest of the ingredients. Toss to combine.
Serve immediately or cover and refrigerate until needed.
