    Chocolate Chip Muffins

    These Chocolate Chip Muffins are moist, fluffy, and loaded with chocolate chips. This recipe is super easy and can be done in 30 minutes (including baking time). All you do is combine the wet and dry ingredients separately, then combine them together and bake.

    About This Recipe

    I grew up eating chocolate chip muffins almost every day. Our family wasn't exactly healthy, and I'm still not sure if it was because money was tight or because we just really loved muffins. But we would buy a 12-pack every week we went shopping without fail. My dad says it's because my brother loved muffins, but I think it's because they were a cheap way to fill us up.

    You know how they say old habits never die? Well, I still find myself eating chocolate chip muffins weekly. But the difference now is I make them myself. Homemade muffins come out so much better than store-bought, and my recipe is super easy. They're moist, tender, and loaded with chocolate chips. Bonus: You can use whatever chocolate chips you like best- I love dark chocolate!

    Key Ingredients

    Flour: When you measure the flour, make sure you spoon and level it into the measuring cup. This will guarantee the most accurate measurement.

    Baking powder: The main source of leavening for the muffins.

    Cinnamon: I love the flavor of cinnamon in this recipe. It makes the muffins taste much more cozy.

    Salt: A little bit to enhance all the flavors.

    Milk: Any type of milk will work. I used whole milk today, but sometimes I use evaporated milk if I have leftovers from another recipe.

    Sugar: Obviously, we need some sugar to keep these muffins sweet.

    Oil: This is what gives the muffins a moist and tender crumb.

    Eggs: For binding all the ingredients together.

    Vanilla extract: For warm flavor.

    Chocolate chips: You can use whatever chocolate chips you like best, but I highly recommend dark chocolate. They are not too sweet, and the bitterness pairs well with the muffin.

    STEP 1: In a large bowl, whisk together the flour, baking powder, cinnamon, and salt.

    STEP 2: In another bowl, whisk together the milk, sugar, oil, eggs, and vanilla extract.

    STEP 3: Stir the wet ingredients into the dry ingredients. Be careful not to overmix...the batter should be slightly lumpy.

    STEP 4: Fold in the chocolate chips.

    STEP 5: Divide the batter evenly among the muffin liners. You can also add some extra chocolate chips on top.

    STEP 6: Bake for 20-25 minutes until a toothpick inserted into the center comes out clean.

    These Chocolate Chip Muffins come out soft, fluffy, and absolutely loaded with chocolate chips. They're so easy to make, and ready in only 30 minutes.

    Ingredients
      

    • 2 cups all-purpose flour
    • 1 tablespoon baking powder
    • 1 teaspoon cinnamon
    • ½ teaspoon salt
    • 1 cup milk
    • ¾ cup sugar
    • ½ cup vegetable oil
    • 2 large eggs
    • 2 teaspoons vanilla extract
    • 1 ½ cups chocolate chips (we love dark chocolate)

    Instructions
     

    • Preheat your oven to 375°F. Line or grease a 12-cup muffin pan with paper liners.
    • In a large bowl, whisk together the flour, baking powder, cinnamon, and salt.
    • In another bowl, whisk together the milk, sugar, oil, eggs, and vanilla extract.
    • Stir the wet ingredients into the dry ingredients. Be careful not to overmix...the batter should be slightly lumpy.
    • Fold in the chocolate chips.
    • Divide the batter evenly among the muffin liners.
    • Bake for 20-25 minutes until a toothpick inserted into the center comes out clean (a few crumbs are okay, but there should be no streaks of wet batter).
    • Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
