    Chicken Parmesan

    About This Recipe

    Sometimes I look at a dish and wonder "who the heck thought of this... and why does it taste so good?" Chicken parmesan is one of those dishes. The first time I had it was at Olive Garden, and now, I make it at home, all the time.

    This easy chicken parmesan recipe has become a favorite for me and my wife. It comes together in only 40 minutes total, but it tastes luxurious and restaurant-quality. The combo of marinara sauce, crispy chicken cutlets, and melty mozzarella cheese is so comforting. We also like to serve it with a plate of spaghetti, which we lightly coat in marinara sauce as well.

    If you are a fan of breaded chicken, then this recipe is 100% for you. Lately, my chicken cutlets have started tasting amazing and I've discovered the secret is to add a lot of seasoning to the breadcrumb mixture. I do about a 50% ratio of grated parmesan to breadcrumbs, and a heaping tablespoon of Italian seasoning per cup, and it tastes AMAZING.

    Key Ingredients

    Chicken breasts: You want to use 2 chicken breasts and cut them in half lengthwise to make them cook faster.

    Dredge: The dredge is a combination of eggs, flour, salt, and black pepper. Most recipes dredge in flour first, then egg wash, but I learned you can combine them into a single step without any drop in quality.

    Breading: I do a combination of panko breadcrumbs, grated parmesan (I use the fake kind), and Italian seasoning.

    Marinara sauce: For this, I use my own homemade recipe here. You can use store-bought as well, but homemade will always be better.

    Mozzarella cheese: This is self-explanatory.

    STEP 1: In a shallow dish, combine the egg wash ingredients.

    STEP 2: In another dish, combine the breadcrumb ingredients.

    STEP 3: Dredge the chicken thoroughly in the egg wash and shake off excess.

    STEP 4: Transfer to the breadcrumbs and coat thoroughly, ensuring no spots are left empty.

    STEP 5: Fry the chicken cutlets for 3-4 minutes on each side until golden brown and crispy.

    STEP 6: Add 1.5 cups of marinara sauce to the bottom of a 9x13 baking dish.

    STEP 7: Add the chicken on top.

    STEP 8: Add the rest of the marinara on top of the chicken.

    STEP 10: Bake at 425°F for 15 minutes until the cheese is melted and the marinara sauce is bubbling on the sides. Enjoy!

    Chicken Parmesan

    This Chicken Parmesan is a classic Italian-American recipe. Made of chicken cutlets, marinara sauce, and melty mozzarella cheese, it's crispy, cheesy, saucy, and super comforting. Easy to make in under 45 minutes.

    Ingredients
      

    • 2 large chicken breasts
    • 2 large eggs
    • 3 tablespoons all-purpose flour
    • 1 teaspoon salt
    • ½ teaspoon black pepper
    • ½ cup breadcrumbs
    • ½ cup grated parmesan cheese
    • 1 tablespoon Italian seasoning
    • 2 tablespoons olive oil
    • 3 cups marinara sauce (try my easy recipe here)
    • 1 cup shredded mozzarella cheese

    Instructions
     

    • Preheat your oven to 425°F. Cut each chicken breast in half lengthwise to make 4 thinner pieces.
    • In a shallow dish, whisk together the eggs, flour, salt, and black pepper.
    • In a separate dish, combine the breadcrumbs, parmesan, and Italian seasoning.
    • Dredge the chicken in the egg wash and shake off excess. Transfer into the breadcrumb mixture and coat thoroughly, ensuring no bald spots.
    • Heat a large pan over medium heat and add the olive oil. Cook the chicken for 3-4 minutes per side until golden brown and cooked through.
    • Spread half of the marinara sauce in a 9×13 baking dish. Lay the chicken in a single layer over the sauce, then spoon the remaining marinara over the top. Sprinkle with mozzarella cheese.
    • Bake uncovered for 15 minutes or until the cheese melts and the sauce is bubbling. Enjoy!
