    Blueberry Waffles

    These classic Blueberry Waffles are crisp on the outside, fluffy on the inside, and of course, filled to the brim with juicy blueberries. They might be the best waffles from scratch I've ever made. The full recipe with details is below.

    About This Recipe

    Breakfast is probably my favorite meal to cook. I generally like challenges in the kitchen, but for breakfast, I usually stick to classics like pancakes, waffles, and scrambled eggs. There's something satisfying about the simplicity of a breakfast routine. Also, my love language is "acts of service", and I just like waking up early to make breakfast for my wife.

    These blueberry waffles are a favorite in our house. I find myself making them every few months because I randomly get a craving for them. Unless it's the summer, I typically make these with frozen blueberries- and I actually prefer them over fresh ones. I find frozen blueberries leak a bit of their juice into the waffles, which makes them taste extra fruity.

    ALSO, blueberries are one of the best berries for your gut health. They're filled with antioxidants and fiber. My wife has IBS, and we've been including more blueberries in her diet, and we think it's helped her a lot.

    Key Ingredients

    The ingredients are pretty standard for a pancake recipe. You'll need flour, sugar, salt, baking powder, milk, eggs, vanilla extract, oil or butter, and blueberries.

    For the oil, I typically use extra virgin olive oil these days because it's healthier. You might think you can taste it, but it actually blends into the pancake very well.

    STEP 1: Whisk the flour, sugar, baking powder, and salt in a large bowl.

    STEP 2: Whisk the milk, eggs, oil, and vanilla in another bowl.

    STEP 3: Pour the wet ingredients into the dry ingredients and mix until JUST combined.

    STEP 4: Fold in the blueberries.

    STEP 5: Spray or brush the waffle iron with oil, then scoop in the waffle batter (don't put too much over it will overflow).

    STEP 6: Close the iron and cook until golden brown.

    Ingredients
      

    • 2 cups all-purpose flour
    • 3 tablespoons sugar
    • ½ teaspoon salt
    • 4 teaspoons baking powder
    • 1 ½ cups milk
    • 2 large eggs
    • ⅓ cup oil (or melted butter)
    • 1 teaspoon vanilla extract
    • 1 cup blueberries (fresh or frozen)

    Instructions
     

    • Preheat your waffle iron.
    • To a large bowl, add the flour, sugar, baking powder, and salt. Whisk.
    • To a medium bowl, add the milk, eggs, oil, and vanilla. Whisk.
    • Pour the wet ingredients into the dry ingredients and mix until JUST combined. Do not overmix. There should be lots of lumps.
    • Gently fold in the blueberries.
    • Spray the waffle iron generously with oil. Scoop batter into the center (do not overfill), and cook until golden brown and crisp. Transfer to a wire rack to cool. Repeat with the remaining batter.
