    Birthday Cake Pancakes (Funfetti)

    These fluffy Birthday Cake Pancakes (or Funfetti Pancakes) are a fun and colorful way to start your morning! Loaded with rainbow sprinkles and topped with homemade vanilla icing, they're perfect for birthday celebrations and kids' sleepovers.

    About This Recipe

    These taste just like a birthday cake! And if you know me, you know I love birthday cake ANYTHING- birthday cake ice cream, muffins, cereal...you name it. When I was a kid, I used to get my parents to buy the Funfetti frosting, and I would eat it straight from the tub. Probably not the healthiest choice, but hey, I was a kid.

    These birthday cake pancakes from scratch are so good. They're studded with rainbow sprinkles, topped with vanilla icing, and I love adding a pile of whipped cream on top as well. Even as an adult, I still can't get enough of them.

    This recipe is derived from my very popular fluffy pancake recipe. I changed it up slightly by adding more sugar, vanilla extract, and of course, rainbow sprinkles. The result is a very soft, fluffy, and sweet pancake that tastes just like birthday cake!

    Key Ingredients

    Flour: For fluffy pancakes, all you need is all-purpose flour. Though if you want a lighter texture, cake flour works just as well.

    Sugar: Of course, we need some sugar for these pancakes. Funfetti pancakes are a bit sweeter than regular pancakes, so I've added 4 tablespoons as opposed to 3 tablespoons in my other pancake recipes.

    Baking powder: For giving the pancakes their fluffiness. Make sure you don't mistake this for baking soda, which will give your pancakes a weird taste, and they will not rise since there is no acid in this recipe.

    Salt: I always recommend adding a bit of salt to enhance all the flavors.

    Milk: Whole milk will give the richest flavor, but any dairy or nondairy milk will work.

    Egg: Acts as a binder for all the ingredients.

    Vegetable oil: Gives a tender and buttery texture to the pancakes. You can also use melted butter for a richer flavor. But personally, I prefer vegetable oil because it's easier to measure and still gives the pancakes a very tender and buttery feel.

    Vanilla extract: For warm vanilla flavor. If you want, you can also substitute some of this with almond extract, but make sure you do not use too much because almond extract is very strong.

    Rainbow sprinkles: Jimmies sprinkles are the best! Any color palette will work here.

    For the icing: You'll need powdered sugar, milk, and vanilla extract.

    STEP 1: In a large bowl, whisk the flour, sugar, baking powder, and salt together.

    STEP 2: In another bowl, whisk the milk, egg, oil, and vanilla extract together.

    STEP 3: Pour the wet ingredients into the dry ingredients and whisk until JUST combined (the batter will be lumpy!). Stir in the sprinkles.

    STEP 4: Heat a nonstick pan over medium heat. Scoop ¼ cup of batter into the pan and cook for 2 minutes until the edges dry up and bubbles form on top.

    STEP 5: Flip and cook for another 1-2 minutes until golden brown.

    STEP 6: To make the icing, combine the icing sugar, milk, and vanilla extract in a small bowl and whisk until smooth.

    Ingredients
      

    • 1 ½ cups all-purpose flour (spooned and levelled)
    • ¼ cup granulated sugar
    • 1 tablespoon baking powder
    • ½ teaspoon salt
    • 1 ¼ cups milk
    • 1 large egg
    • ¼ cup vegetable oil (or melted butter)
    • 1 tablespoon vanilla extract
    • ⅓ cup rainbow sprinkles

    For the icing

    • ½ cup powdered sugar
    • 1 ½ tablespoons milk
    • ½ teaspoon vanilla extract

    Instructions
     

    • In a large bowl, whisk the flour, sugar, baking powder, and salt together.
    • In another bowl, whisk the milk, egg, oil and vanilla extract together.
    • Pour the wet ingredients into the dry ingredients and whisk until JUST combined (the batter will be lumpy!). Stir in the sprinkles.
