This Asian Coleslaw is one of my favorite summer salads! It's made with cabbage, carrots, cilantro, and green onions, all tossed in a creamy peanut dressing. Every bite is full of fresh flavors and crunchy textures.

About This Recipe
I'm a huge fan of coleslaw, but sometimes I feel bad about consuming so much mayo. At the same time, I'm not always in the mood for a simple vinaigrette... sometimes I want something with a bit more substance... that's when I make this Asian coleslaw recipe! It doesn't have any mayo, but it still has a ton of richness thanks to peanut butter.
This recipe is actually derived from an old Bobby Flay recipe from one of his old cookbooks. I used to always make it for my family growing up, but I didn't have all the ingredients, so I made my own version. My version is very simple and anyone can make it with a trip to a regular grocery store.

Key Ingredients

Vegetables: Green cabbage, red cabbage, carrots, green onions, and cilantro.
Dressing: You'll need olive oil, rice wine vinegar, peanut butter, honey, sriracha, soy sauce, minced ginger, and toasted sesame oil.
Roasted peanuts: I love to add some crushed roasted peanuts for extra crunch.
Instructions

STEP 1: Combine all the dressing ingredients in a small bowl and whisk until smooth.

STEP 2: To a large bowl, add all the vegetables and the roasted peanuts.

STEP 3: Drizzle the dressing over the top and toss to combine. Enjoy!


Asian Coleslaw
Ingredients
- ½ small head green cabbage
- ½ small head red cabbage
- 2 medium carrots (shredded)
- ½ cup sliced green onions
- ½ cup chopped chopped cilantro
- ¼ cup chopped peanuts (optional)
For the dressing
- ¼ cup rice wine vinegar
- ¼ cup olive oil
- 2 tablespoons peanut butter
- 2 tablespoons honey
- 1 tablespoon chili sauce (like sriracha)
- 1 tablespoon soy sauce
- 1 tablespoon minced ginger
- 2 teaspoons toasted sesame oil
Instructions
- Combine all the dressing ingredients in a small bowl and whisk until smooth.
- To a large bowl, add the rest of the salad ingredients.
- Drizzle the dressing over top and toss to combine. Enjoy!
