    Air Fryer Oyster Mushrooms (Soy Butter)

    These Air Fryer Oyster Mushrooms are mixed with a delicious soy butter sauce and air-fried in a tin foil pouch. Most of the recipes I saw involved breading the mushrooms, but this one has no breading.

    I learned this recipe a few years ago from a Korean couple at a summer barbeque with friends. It's really simple to put together and goes well with any type of meat. Basically, you just pack everything into a foil pouch and cook it for about 10 minutes.

    Recently, my parents have been gifting me boxes of their homegrown oyster mushrooms, and this recipe has been a godsend for that. I've made this recipe at least five times, and I'm still not tired of it.

    Grating the garlic for more flavor

    I highly recommend grating the garlic (instead of mincing it) so it releases more flavor into the sauce quickly. I'm using a microplane for this. The garlic will come out looking like a puree and disperse more evenly into the sauce:

    Should I add cornstarch?

    I like adding a small amount of cornstarch to the pouch because oyster mushrooms release a lot of moisture when they cook. The cornstarch will make the sauce thicker and coat the mushrooms better so that they will taste more flavorful.

    Make a tin foil pouch

    I use a sheet of tinfoil to make a small pouch to hold the oyster mushrooms and seasoning. Add a few pieces of butter on top too. The mushrooms come out steaming hot, so make sure to be careful when you open the pouch.

    Air Fryer Oyster Mushrooms (Soy Butter)

    This is a quick and easy side dish that takes 15 minutes to make. My secret trick is adding a little cornstarch to the mushrooms so that the sauce thickens while it cooks.

    Ingredients
      

    • ½ pound oyster mushrooms
    • 1 tablespoon soy sauce
    • 1 clove garlic (grated)
    • 1 teaspoon cornstarch
    • 2 tablespoons butter (cubed)

    Instructions
     

    • Prepare a sheet of aluminum foil. Mine was about 14×16 inches.
    • Use your hands or a knife to separate the oyster mushrooms into bite-sized pieces. Transfer to a medium bowl along with the soy sauce, garlic, and cornstarch. Mix well.
    • Transfer the mushrooms to the center of the tin foil and scatter the butter on top. Scrunch the tin foil together to form a pouch.
    • Preheat your air fryer to 400°F. Place the pouch in the center and cook for 10 minutes. Enjoy!
