I have no idea what to call this dish because it has no official name, but it's been going viral on social media for a few months now. It's basically cottage cheese, sweet potato, avocado, and taco beef, drizzled with hot honey. I was skeptical at first, but it exceeded my expectations!

The reason people like this dish is because it's high in protein, but I actually think it tastes really good as well. The combination of flavors works really well. Not only that, it's super simple to whip up- it only took me about 30 minutes. Basically, you want to start by baking the sweet potatoes, and while that's going on, you can prepare everything else.
I used store-bought taco seasoning this time just to see how fast I could make this dish, but normally, I make my own taco seasoning. If you're not in a rush, I'd say just make your own.
In terms of nutrients, this dish is very well balanced. You have a good amount of complex carbohydrates, fiber, protein, and healthy fats. If this is something you want to make regularly, I say go ahead!
Instructions

STEP 1: Chop the sweet potatoes, then toss them with olive oil, salt, and black pepper. Bake at 425°F for 25 minutes.

STEP 2: Heat a skillet over medium-high heat. Cook the ground beef until no longer pink, 6-7 minutes. Add taco seasoning and water, and cook until thickened.

STEP 3: Combine the honey and hot sauce in a small bowl and set aside.

STEP 4: Assemble the bowls by adding a bit of each component (yes, I used a plate), and drizzling with hot honey.

Viral Cottage Cheese Sweet Potato Beef Bowl
Ingredients
- 2 medium sweet potatoes (skinned and chopped 1-inch cubes)
- 1 tablespoon olive oil
- salt & pepper
- 2 tablespoons honey
- 1 teaspoon hot sauce (like sriracha, or Frank's Red Hot, or tabasco)
- 1 pound ground beef
- 1 package taco seasoning (or try my homemade recipe)
- 1 ½ cups cottage cheese
- 2 medium avocado
Instructions
- Preheat your oven to 425°F and line a large baking sheet with parchment paper.
- Toss the sweet potatoes with olive oil, salt, and pepper, and spread them on the baking sheet. Bake for 25 minutes until the edges are browned.
- In a small bowl, combine the honey and hot sauce. Set aside.
- Heat a large skillet over medium-high heat. Cook the ground beef until no longer pink, about 6-7 minutes. Add the taco seasoning and ¼ cup of water. Cook for 1-2 minutes until thickened.
- To assemble a bowl, add the ground beef, sweet potatoes, cottage cheese, and avocados. Drizzle on the hot honey.
