Preheat your oven to 425°F and line a large baking sheet with parchment paper.
Toss the sweet potatoes with olive oil, salt, and pepper, and spread them on the baking sheet. Bake for 25 minutes until the edges are browned.
In a small bowl, combine the honey and hot sauce. Set aside.
Heat a large skillet over medium-high heat. Cook the ground beef until no longer pink, about 6-7 minutes. Add the taco seasoning and ¼ cup of water. Cook for 1-2 minutes until thickened.
To assemble a bowl, add the ground beef, sweet potatoes, cottage cheese, and avocados. Drizzle on the hot honey.
