    Tom Yum Ramen

    I'm back with another tom yum paste hack! This time I'm making a quick and easy Tom Yum Ramen using instant noodles and storebought tom yum paste. I'm keeping this recipe as simple as possible, but you can easily jazz it up with extra veggies or an egg.

    This isn't my first time using storebought tom yum paste for making a quick meal. I have another recipe for a 15-minute Tom Yum Paste Soup that uses it as well. Go check it out if you have some time.

    What tom yum paste to use?

    Here is the picture of the brand I'm using. I am not an expert in Thai cuisine by any means but I have heard this is one of the more popular brands. The key is to fry the paste in a little bit of oil first to bring out its flavors.

    What instant noodles to use?

    For this recipe, I'm using the Shin brand of instant ramen. My wife is actually the one that got me hooked on these noodles. They are a little more expensive than other brands but the quality of the noodle is much better. Mainly they are thicker and they have a bit of a chew.

    Adding coconut milk

    Adding coconut milk will help round out some of the more sour flavors. You don't have to add it, but I think it tastes better with it. I always keep an opened can of coconut milk in my freezer for these kinds of recipes. When I need some, I just submerge the can in hot water to thaw it, then I use what I need.

    Tom Yum Ramen

    This is an easy hack to make tom yum ramen at home. It uses instant ramen and storebought tom yum paste.

    Ingredients
      

    • 1 tablespoon oil
    • 2-3 teaspoons Tom Yum Paste (I usually add 3 teaspoons but it can be a bit spicy)
    • 2 cups water
    • 2 tablespoons coconut milk
    • 1 package instant ramen

    Additional toppings

    • leafy veggies (my favorite is pea tips)
    • egg
    • sliced scallions

    Instructions
     

    • In a small pot, heat the oil over medium heat. Add the tom yum paste and cook it for 30-45 seconds until the oil turns red.
    • Add 2 cups of water, coconut milk, and the seasoning packets from the ramen package. Bring to a boil.
    • If you are not adding any additional toppings, then you can add the ramen noodles and cook for 2-3 minutes. But if you are adding additional toppings like an egg or pea tips, add them before cooking the ramen noodles.
