These roasted chicken legs are one of my favorite Maggi seasoning recipes. I've been trying to find ways to use my bottle of Maggi sauce and these are definitely going on my meal rotation. You can bake these in the oven or air-fry them like I did.
A few years ago, I bought a huge bottle of Maggi sauce for a fish ball recipe that an auntie from my wife's church gave me. I don't know why I bought so much since I only needed one teaspoon. Anyway, it's been sitting in my pantry for at least two years, so I've been trying to find ways to use it.
Last week, I used it for a chicken marinade, and it tasted really good! I just combined the Maggi seasoning with chicken legs, minced ginger, minced garlic, soy sauce, and sugar. I let it marinate for a few hours and then cooked it in my air fryer.
They were super crispy, and the Maggi flavor penetrated about ¼-inch into the meat. I tried making it again the following week, but this time, I added a tablespoon of rice vinegar, and it tasted even better. The vinegar also made the meat a little more tender.
While the legs were roasting, I poured the leftover marinade into a small saucepan and heated it until it was boiling (this kills any salmonella, if present), then served it on the side.
Roasted Maggi Sauce Chicken Legs
Ingredients
- 4 chicken legs
- ¼ cup Maggi seasoning sauce
- 2 tablespoons soy sauce
- 3 tablespoons sugar
- 1 tablespoon rice vinegar
- 1 tablespoon minced garlic
- ½ tablespoon minced ginger
Instructions
- Combine all the ingredients except the chicken legs in a bowl and mix well.
- Add the chicken legs and marinade to a Ziplock bag. Close the bag and try to get as much air out of it as possible (I submerged it in a pot of water). Refrigerate for at least 4 hours.
- At this point, you can air-fry or bake them. To air-fry, preheat your air fryer to 400℉. Spray the tray with oil and place the chicken legs skin-side down. Cook for 15 minutes, then flip and cook for another 10 minutes. To bake, roast at 400℉ for 35-40 minutes, flipping once halfway through.
- While the legs are roasting, pour the leftover chicken marinade into a small saucepan and bring to a boil. When the legs are done, you can serve this sauce with them.
