    Eggs and pickling liquid are a match made in heaven. If you've never had pickled eggs before, let me have the privilege of introducing you to one of the best flavor combos out there. They're tangy, slightly sweet, salty, and have the perfect vinegary bite. We love these as a little snack during the day with freshly cracked pepper or chopped with avocados on toast.

    About This Recipe

    Calling all egg fanatics.. I may have just discovered one of the best egg recipes. These pickled eggs are super easy to make but pack a ton of flavor. They're like mini acidic-umami flavor bombs. Imagine eating an egg with a shot of pickle juice... it's like that, but I promise it's way better than it sounds.

    These are super addictive (and disappear fast), so I recommend making at least a dozen when you do this recipe. I also recommend letting them pickle for at least 2 days to allow the brine to really penetrate the eggs.

    What I love most about his recipe is that it has many use cases. I personally love just eating these as a mini snack between meals, but they can be incorporated into other dishes as well. For example, charcuterie boards, sandwiches/wraps, salads, and more.

    Eggs: For the perfect hard-boiled eggs, add the eggs to a pot and cover with 1 inch of water. Bring to a boil, then shut off the heat and let it simmer for 13 minutes. Run under cold water until cool, then peel.

    White vinegar: Pro-tip, if you use a lot of vinegar like myself, you can get giant bottles of vinegar for really cheap at Costco.

    Sugar: Sugar is important for balancing the acidity of vinegar.

    Onions & garlic: I love the savory depth from onions and garlic.

    Dill: I used fresh dill, but dried works reasonably well too.

    Other seasonings: Salt, black peppercorns, bay leaves, yellow mustard seeds,

    STEP 1: Place the eggs in a large jar and set aside.

    STEP 2: Add the rest of the ingredients EXCEPT the cold water and bring to a boil. Reduce the heat and let it simmer for 5 minutes. Remove from the heat and stir in the cold water.

    STEP 3: Allow the mixture to cool for another 5-10 minutes until it's lukewarm to the touch. Pour over the eggs and refrigerate for at least 2 days.

    These pickled eggs are an explosion of flavor. They're incredibly easy to make and can be used for charcuterie, salads, sandwiches, wraps, or just eating on their own.

    Ingredients
      

    • 12 large hard-boiled eggs (peeled)
    • 3 cups white vinegar
    • 1 medium onion (sliced)
    • ⅓ cup sugar
    • 1 clove garlic (smashed)
    • 2 bay leaves
    • 2 sprigs fresh dill
    • 1 tablespoon salt
    • 1 teaspoon black peppercorns
    • 1 teaspoon yellow mustard seeds
    • 1 cup cold water

    Instructions
     

    • Place the eggs in a large jar and set aside.
    • To a small saucepan, add the rest of the ingredients EXCEPT the cold water. Bring to a boil, then reduce to a simmer. Cook for 5 minutes. Remove from the heat and stir in the cold water.
    • Allow the mixture to cool for another 5-10 minutes.
    • Pour the brine over the eggs, then refrigerate for at least 2 days.
