    Greek Yogurt Pancakes

    These fluffy Greek Yogurt Pancakes are the best breakfast to help you reach your protein goals. Made with Greek yogurt, eggs, and milk, they're nutritious, protein-rich, and extremely easy to make. It took me about 20 minutes to make 8 pancakes and even less time to eat them.

    About This Recipe

    2025 is a big year for me. Let's just say I need to bulk up for a special event in the summer. Since January, I've been hitting the gym and eating a lot of extra protein to gain muscle mass. These Greek yogurt pancakes have become my go-to breakfast.

    My favorite part is that they taste just like regular pancakes. You'd think the Greek yogurt would make them overly thick or rich, but no, they are still very light and fluffy. If anything, I find they are slightly moister than regular pancakes. The extra acidity also helps give them a better flavor IMO.

    Key Ingredients

    Greek Yogurt: I typically use 2% fat Greek yogurt. Full disclosure, I did not test this recipe using any other fat percentages, however, I would not expect the results to change that much. You might need to add some more flour or milk to compensate for the different thicknesses.

    Other wet ingredients: Milk, eggs, vanilla extract, and melted butter.

    Dry ingredients: Flour, sugar, baking powder, and salt.

    STEP 1: In a small bowl, whisk together the flour, sugar, baking powder, and salt.

    STEP 2: In a large bowl, whisk together the Greek yogurt, eggs, milk, vanilla extract, and melted butter. The melted butter will harden immediately but that is OK. The important part is that it is evenly distributed in the other wet ingredients.

    STEP 3: Add the dry ingredients to the wet ingredients and whisk until JUST combined (do not overmix).

    STEP 4: Heat a nonstick skillet over medium heat until hot. Add ¼ cup of batter and cook for 2 minutes until the edges start to dry and bubbles form on the surface. Flip and cook for another 1-2 minutes until cooked through. Repeat with the remaining batter.

    Ingredients
      

    • 1 cup all-purpose flour
    • 2 tablespoons sugar
    • 2 teaspoons baking powder
    • ¼ teaspoon salt
    • 1 cup Greek yogurt (I used 2% plain)
    • ¼ cup milk (or water)
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 2 tablespoons melted butter (or oil)

    Instructions
     

    • In a small bowl, whisk together the flour, sugar, baking powder, and salt.
    • In a medium bowl whisk together the Greek yogurt, milk, eggs, vanilla, and melted butter.
    • Pour the dry ingredients into the wet ingredients, and whisk until JUST combined - do not overmix (it's okay for there to be lumps).
    • Heat a large nonstick pan over medium heat until hot (it takes me about 60-90 seconds). Lightly grease the surface with some oil or butter. Pour ¼ cup of pancake batter onto the pan. Cook for about 2 minutes until the edges start to dry up and bubbles form on the surface. Flip and cook for another 1-2 minutes. Repeat with the rest of the batter. Make sure you grease the pan between each pancake.
    • Serve with butter, maple syrup, or your favorite pancake toppings!

      These greek yogurt pancakes were absolutely delicious, I subbed some bourbon vanilla paste and I will definitely be making them again!

        Actually yes i have! They freeze incredibly well. I defrost them the night before then panfry them on medium-low for 3 minutes on each side. They taste just as good

      Amazing pancakes. SO good. Easily the best pancakes I have ever made. My insanely picky kids asked for three batches this weekend. The few "leftovers" get eaten cold with nutella for snacks.
