    Flaxseed Pancakes

    These healthy Flaxseed Pancakes are low in carbs, high in fiber, healthy fats, and protein! Easy to make in one bowl and ready in 20 minutes.

    About This Recipe

    If you're like me and have a giant bag of flax seeds from Costco that have been sitting in your pantry for far too long, this recipe is for you. Seriously, I never understand how anyone finishes those bags quickly. I use them to add extra fiber and healthy fats to my diet, but it takes me a good six months to get through one. I throw them into smoothies, oatmeals, and even as a thickener for soups and stews.

    But now I have discovered the ultimate way to use them up... flaxseed pancakes! One recipe makes about 8 pancakes, but uses a whole cup of flaxseeds. I don't know of any recipe that uses more. Because there's so much flax in them, these pancakes are packed with fiber (and healthy fats). Each pancake has roughly 15-20% of your daily fiber intake, so if you can eat a lot in one sitting, you can get your whole day's worth in one meal.

    Key Ingredients

    Flaxseed Meal: Also known as ground or milled flaxseeds. In this recipe, it replaces the flour you'd normally use in regular pancakes. If you can't find flaxseed meal, you can easily make your own by grinding flaxseeds in a spice grinder.

    Eggs: These give the pancakes structure so that they don't fall apart when we pan-fry them.

    Almond milk: Or any other type of milk.

    Sugar: I like adding 2 tablespoons of sugar to make the pancakes sweeter. Feel free to omit this, or replace it with natural sugar, like honey or maple syrup.

    Baking powder: To make them light and fluffy.

    Cinnamon & vanilla extract: For warm, cozy flavor.

    Salt: Just a tiny bit will help elevate the flavors.

    STEP 1: In a large bowl, whisk together all the ingredients until smooth. Let the batter rest for a few minutes to thicken.

    STEP 2: Heat a large nonstick pan over medium-low heat. When the pan is hot, lightly grease it with butter or oil. Scoop ¼ cup of batter into the pan. Cook until the edges dry up, and bubbles form on top, about 2 minutes.

    STEP 3: Flip and cook for another 1-2 minutes until cooked through.

    These Flaxseed pancakes are nutrient-dense (high in fiber, protein, and healthy fats), but still soft, fluffy, and delicious!
