    Extra Fluffy Protein Pancakes (53g protein)

    About This Recipe

    As someone who goes to the gym often, I've tried my fair share of protein pancake recipes. Most of them... not good. Either the texture is awful, or they just taste horrendous. But these ones... they're actually good! And they're fluffy too.

    The protein in these pancakes comes from eggs, Greek yogurt, and protein powder. I usually hate the taste of protein powder, but in these pancakes, you can barely tell they are in there. I used vanilla protein powder from Costco, but of course, you can use whatever protein you have (though vegan protein may not taste as good).

    This recipe comes together super fast. I can usually get it done in under 20 minutes. I usually get two pans going at once so I can cook multiple pancakes in parallel.

    Key Ingredients

    Oats: Instead of flour, I like using oats for this recipe. Not only is it healthier, but it tastes better too. You can use either rolled oats or QUICK oats. Quick oats are basically the same, but they've been steamed and rolled beforehand, so they cook quicker.

    Protein powder: Any protein powder will work.

    Eggs: I used 3 whole eggs. Sometimes, I substitute the eggs for plain egg whites. Just remember, one whole egg is equal to 3 tablespoons in volume or 50g, so if you use whites, just measure to that.

    Greek yogurt: I typically use full-fat Greek yogurt since it has fewer additives.

    Maple syrup: For sweetening.

    Baking powder: This is what gives the pancakes a fluffy texture.

    STEP 1: Add all the ingredients to a blender.

    STEP 2: Blend until smooth, about 30 seconds on a high-speed blender.

    STEP 3: Heat a greased skillet over medium heat until hot. Add ¼ cup of batter and cook until the edges dry up and bubbles appear on the surface, about 2 minutes.

    STEP 4: Flip and cook for another 1-2 minutes until golden brown.

    Ingredients
      

    • 1 ¼ cups oats
    • 2 ½ teaspoons baking powder
    • ¼ cup protein powder
    • 3 large eggs
    • ⅓ cup Greek yogurt
    • 2 tablespoons maple syrup
    • oil (for greasing the skillet)

    Instructions
     

    • Add all the ingredients to a blender and blend until smooth.
    • Heat a large skillet over medium heat until hot. Grease it with a bit of oil or butter. Scoop ¼ cup of batter and cook until the edges dry up and bubbles form on the surface- the bottom should be golden brown. Flip, and cook for another 1-2 minutes until golden brown.
