As the days have gotten more dreary, I've been getting more and more lazy with my mornings (tell me I'm not the only one this happens to...). Something about the cold weather keeps me in bed longer, and I'm just not in the mood to do anything. And to my wife's detriment, this means I haven't been making my extravagant weekend breakfasts anymore.
But that's where these homemade biscuits come in. I've been making a batch on Friday mornings to have as a quick breakfast ready for weekends. I usually toast them in my air-fryer for a few minutes, then spread them with either butter, peanut butter, or jam- it's quick, easy, and satiates my appetite. They're also great for savory applications, like biscuits in gravy, or as a shortcut topping for chicken pot pie. But lately, I've just been having them for breakfast.
The key to good biscuits is to keep your ingredients cold and not to overwork the dough. Your butter should be kept in the fridge until needed. After you cut the butter into the flour, I recommend putting the bowl in the freezer for about 15 minutes. This keeps the butter cold and gives you those "flaky" layers when the biscuits bake.
Key Ingredients

All-purpose flour: As per usual, make sure to spoon and level this into your measuring cup to guarantee an accurate measurement. Scooping directly from the flour bag will compact the flour and cause overmeasuring.
Baking powder: I recommend 1.5 tablespoons for 2 cups of flour to improve the rise in the oven.
Salt and sugar: For flavoring the biscuits.
Butter: I use unsalted butter. If you use salted, you can skip the salt.
Milk: You can also use water, but I enjoy the flavor and the extra-tender texture from using milk. I use whole milk.
Instructions

STEP 1: In a large bowl, combine the flour, baking powder, sugar, and salt.

STEP 2: Cut in the butter, then transfer to the freezer for 15 minutes.

STEP 3: Pour the milk into the flour-butter mixture and mix until JUST combined- avoid over mixing.

STEP 4: Turn the dough onto a generously floured surface, and sprinkle more flour on top. Use a rolling pin to flatten the dough to an 8x5-inch rectangle, approximately ¾ inch thick.

STEP 5: Cut the dough into circles and transfer to the baking sheet, 1 inch apart.

STEP 6: Bake for 12-14 minutes, or until tops are golden brown. Remove from the oven and brush with melted butter.

- 1 ½ tablespoons baking powder
- 1 ½ teaspoons granulated sugar
- ¾ teaspoon salt
- ½ cup unsalted butter
- 1 cup milk
Instructions
- In a large bowl, combine the flour, baking powder, sugar, and salt. Cut in the butter, then transfer to the freezer for 15 minutes.
- Preheat your oven to 425°F and line a large baking sheet with parchment paper.
- Pour the milk into the flour-butter mixture and mix until JUST combined- avoid over mixing. The dough will be very sticky.
- Turn the dough onto a generously floured surface, and sprinkle more flour on top.
- Use a rolling pin to flatten the dough to an 8x5-inch rectangle, approximately ¾ inch thick.
- Cut the dough into circles and transfer to the baking sheet, 1 inch apart.
- Bake for 12-14 minutes, or until tops are golden brown. Remove from the oven and brush with melted butter.
