    Buttered Noodles

    These Buttered Noodles take me right back to my childhood. They're quick, easy, and made with only 5 simple ingredients. Garnished with parsley for some extra freshness!

    About This Recipe

    This is one of those pasta recipes where the sauce is made in less time than the pasta itself. All you do is melt some butter in a pan, sizzle some garlic, then toss with Parmesan, parsley, and black pepper. Easy peasy, and perfect for when you don't have too many ingredients at home.

    Do you need to salt the pasta water? Personally, I don't salt the pasta water when I make buttered noodles. The reason being that Parmesan cheese already brings plenty of salt, and I find that salting the pasta water can make everything a bit too salty. Plus, you may need to add extra pasta water to get the sauce consistency correct. If the water is too salty... well... you're out of luck.

    For serving, I like to pair this with some vegetables for a healthy dinner. Something like a Greek Salad or Roasted Cauliflower.

    Key Ingredients

    Egg Noodles: I love the tender texture of egg noodles, but any type of pasta will work.

    Butter: I use unsalted butter so I can control the salt levels myself.

    Garlic: Freshly minced for the best flavor!

    Parmesan cheese: This adds a bit of creaminess to the sauce. I recommend freshly grating this as freshly grated cheese melts better.

    Parsley: Adds freshness.

    Black pepper: Add to your own taste.

    Instructions

    STEP 1: Bring a medium pot of water to a rolling boil. Cook the egg noodles according to the package directions. Reserve ¼ cup of pasta water, then drain the rest. Set aside.

    STEP 2: In a large skillet, melt the butter over medium heat. Add the garlic and cook for one minute.

    STEP 3: Add the parmesan cheese and 2 tablespoons of the pasta water. Stir until the cheese melts. Add the pasta, parsley, and black pepper. Toss until well combined. If the noodles are dry, add more pasta water.

    Ingredients
      

    • 8 ounces egg noodles
    • ¼ cup butter
    • 3 cloves garlic (minced)
    • ¼ cup grated parmesan cheese
    • 1 tablespoon chopped fresh parsley
    • ¼ teaspoon black pepper (or more to taste)
