    Blackberry Cobbler

    This classic Blackberry Cobbler is rich, cakey, and filled with warm jammy berries. It's easy to make and a great way to use up fresh or frozen blackberries! One of my favorite desserts to make in the summer.

    About This Recipe

    It's finally blackberry season here in the Pacific Northwest! One of my favorite times of the year because our local blackberry bushes become filled with juicy berries. Today I'm sharing with you my favorite blackberry cobbler, which can be made extremely quickly in about 70 minutes (and 60 minutes of that is just baking time!).

    There seems to be a lot of confusion between a blackberry cobbler and a blackberry crumble. When I told my friends I was making cobbler, they assumed it was going to be crumbly like a crumble. But a cobbler is very different. Crumble and cobbler are both baked desserts, but a cobbler is more soft and cakey. Cakes are my favorite dessert, so cobblers are better, in my opinion!

    You can eat this dessert by itself, or with a scoop of vanilla ice cream! My wife likes to reheat it in the air-fryer before eating, but I love to just scoop it directly from the fridge. It's the summer, so cold desserts are the best!

    Key Ingredients

    Blackberries: I used 2.5 cups of blackberries. But if you like it extra-fruity, you can add up to 4 cups. But just make sure your baking dish is at least 8x8 inches, which is the size I recommend. If it's smaller, it could overflow.

    Flour: I used all-purpose flour. Make sure to spoon it into the measuring cup so you don't overmeasure the amount.

    Sugar: I find that the amount of sugar is highly dependent on how sweet your blackberries are. My wife tends to pick more tart berries, so I always have to add extra sugar. ¾ cup sugar is a good amount for regular blackberries. If you find your berries are more tart, feel free to add a bit more.

    Milk: To form the batter with the flour.

    Melted butter: Provides that rich, decadent flavor and texture.

    Baking powder: For making the batter fluffy and light.

    Vanilla extract: Provides a warm flavor.

    STEP 1: Preheat your oven to 350°F and grease an 8x8-inch baking dish.

    STEP 2: In a medium bowl, whisk together the flour, sugar, and baking powder.

    STEP 3: Stir in the milk until just combined, then stir in the melted butter and vanilla.

    Blackberry Cobbler

    This blackberry cobble is easy to make and one of my favorite summer desserts. It's rich and cakey, and filled with warm jammy berries. Fresh or frozen berries both work with this recipe!

    Ingredients
      

    • 1 cup all-purpose flour (spoon and levelled)
    • ¾ cup sugar (plus more for sprinkling)
    • 1 teaspoon baking powder
    • 1 cup milk
    • ½ cup melted butter
    • 1 teaspoon vanilla
    • 2 ½ cups blackberries (you can add up to 4 cups if you like it really fruity!)

    Instructions
     

    • Preheat your oven to 350°F and grease an 8x8-inch baking dish (or similar size).
    • In a medium bowl, whisk together the flour, sugar, and baking powder. Stir in the milk until just combined, then stir in the melted butter and vanilla.
    • Pour the batter into the prepared dish. Sprinkle the berries evenly on top, then sprinkle with sugar.
    • Bake for 60-65 minutes until golden and bubbly. Allow the cobbler to rest for 10-15 minutes before serving. Enjoy!

      Will this work with frozen blueberries? Thanks.

        Yeah, you can use frozen blueberries. But make sure u let the blueberries defrost for 30 minutes at room temp first. Or, you can increase the baking time by 10 minutes, but you'll need to cover the cobbler with foil in the later half of baking so it doesnt get too brown.
