    This Baked Oatmeal recipe is loaded with heart-healthy oats and warmly scented with cinnamon and brown sugar. Made with only 8 simple ingredients and a couple of minutes of prep, it's the perfect way to start off your day

    About This Recipe

    My wife and I are always on the hunt for delicious breakfast recipes, especially ones that are easy to make and high in fiber. This baked oatmeal recipe has become a weekly staple for us. It's loaded with fiber and easy to prep a big batch for the entire week. Another bonus is that it's made in a single bowl, so cleanup is super easy as well.

    Baked oatmeal is essentially an oatmeal casserole. All you do is combine the ingredients in a bowl, then bake in the oven until it's cooked. Unlike stovetop oatmeal, which has a creamy porridge consistency, baked oatmeal is chewier and heartier. You can customize it by adding your standard oatmeal toppings like bananas, berries, apples, or nuts. My favorite is adding sliced almonds on top because it gives it an extra layer of crunch and texture!

    Rolled oats: Rolled oats (also called old-fashioned oats) are essentially for giving this baked oatmeal recipe its hearty and chewy texture. Steel-cut oats are too dry when baked, and instant oats tend to break down and become too mushy.

    Milk: I recommend whole milk for the extra richness, but you can really use any type of milk you want, non-dairy options included.

    Eggs: These help the oatmeal set into the perfect consistency.

    Brown sugar: I enjoy the flavor of brown sugar with cinnamon, but you can also use equal parts maple syrup without any change in the texture.

    Butter: I use unsalted butter and add my own salt, so I can control the salt levels better. If you use salted butter, you can probably skip the salt altogether.

    Baking powder: A bit of baking powder gives the baked oatmeal a lighter texture, so the bars are not too dense.

    Cinnamon: Make sure your cinnamon is fresh (preferably less than a few months old) for the most potent flavor.

    Vanilla extract: Compliments the flavor of the cinnamon and brown sugar.

    STEP 1: In a large bowl, whisk together all the ingredients until combined.

    STEP 3: Bake for 35 minutes, or until set. Allow the oatmeal to cool for 5 minutes before slicing into squares. Enjoy!

    My Baked Oatmeal recipe is a quick and easy breakfast. All you need is a 9x9 baking dish, some pantry staples, and about 35 minutes!

    Ingredients
      

    • 3 cups whole rolled oats
    • 2 cups milk
    • 2 large eggs
    • ½ cup brown sugar (or maple syrup)
    • ¼ cup melted unsalted butter
    • 1 teaspoon baking powder
    • 1 teaspoon vanilla extract
    • 1 teaspoon ground cinnamon
    • ½ teaspoon salt

    Instructions
     

    • Preheat your oven to 375°F and generously grease a 9x9-inch baking dish.
    • In a large bowl, whisk together all the ingredients until combined. Pour into the prepared baking dish.
    • Bake for 35 minutes, or until set (if you move the pan, the oatmeal should not jiggle). Allow the oatmeal to cool for 5 minutes before slicing into squares. Enjoy!
