I love using my broiler for quick and easy weeknight dinners. It takes almost no time at all and gives your food a wonderful char that tastes like it just came off the grill. For this BBQ chicken recipe, I used the broiler setting to cook the chicken and caramelize the sauce to give it a deeper, more complex flavor.
This recipe couldn't be easier. Only 4 ingredients are required: boneless skinless chicken thighs, salt, black pepper, and barbecue sauce. Simply marinate the chicken for at least 40 minutes (but I recommend a few hours for the best flavor), spread it on a baking sheet, and broil. The secret is to flip the chicken and brush it with sauce several times while it cooks. This builds a thick, flavorful layer of sauce on the outside of each piece.
Key Ingredients

Chicken thighs: For an easy weeknight meal, I love using boneless skinless chicken thighs because they cook quickly. However, you can use skin-on, bone-in chicken thighs as well, but you'll need to double the cooking time.
Salt and black pepper: For seasoning the meat. I suggest 1 teaspoon of salt and ½ teaspoon of black pepper, but feel free to add more to your own taste.
BBQ sauce: I made my own barbecue sauce for this recipe, but feel free to use your favorite store-bought brand.
Instructions

STEP 1: In a large bowl, combine the chicken thighs, salt, black pepper, and ½ cup of barbecue sauce. Cover and let it rest in the fridge for at least 40 minutes or up to 24 hours.

STEP 2: When you're ready to cook, preheat your oven to broil and line a baking sheet with aluminum foil. Position the rack so your chicken will be 4-5 inches from the heating element. Spread the chicken on the prepared baking sheet.

STEP 3: Broil for 7 minutes on the first side, then remove from the oven and turn the pieces over. Brush with more barbecue sauce and broil for another 7 minutes.

STEP 4: Turn the pieces again and brush with the remaining barbecue sauce. Broil for 4-5 minutes, until the sauce is charred and the chicken is cooked through. I love sprinkling it with some parsley for extra color!
