    About This Recipe

If you love light and fluffy waffles, then you're going to LOVE these almond flour waffles! We recently had some gluten-free friends come over for brunch, so I had the idea to make these for them. They were devoured quickly, and I actually had to make an extra batch right after because everyone loved them so much. Even though my wife and I are not celiac, this recipe is definitely going to stay in our breakfast rotation going forward.

These almond flour waffles are completely gluten-free and just as good as any other waffle I've made. They're soft, tender, and have a delicious nutty flavor thanks to the almond flour. And as an added bonus, they are loaded with protein and healthy fats to keep you full until lunchtime.

    Key Ingredients

    ingredients prepped in bowls.

Almond flour: Instead of regular flour, these waffles are made with almond flour. You can use store-bought or make your own almond flour by grinding almonds very finely in a blender.

Baking powder: Makes the waffles light and fluffy and helps the batter fill into the crevices of the waffle maker. If you're celiac, make sure your baking powder is certified gluten-free.

Almond milk: I use almond milk, but you can use any type of milk you prefer.

Eggs: Act as a binder and add moistness and richness to the waffles.

Honey (optional): This is totally optional, but I like adding honey for some sweetness. Feel free to leave this out if you like your waffles less sweet or are looking for a low-carb option.

Vanilla extract: Adds a lovely vanilla flavor to the waffles.

Salt: To enhance all the rich and nutty flavors

    Instructions

waffle batter whisked until smooth in bowl.

STEP 1: In a large bowl, whisk all your ingredients until completely smooth.

batter scooped into center of waffle maker.

STEP 2: Spray both sides of the waffle iron with oil. Scoop batter into the center of the iron (be careful not to add too much).

waffle golden brown after cooked in waffle maker.

STEP 3: Close and cook until golden brown. Repeat with the remaining batter. Serve with your favorite waffle toppings!
