1 cup peanut butter 1 cup powdered sugar ¼ cup butter (softened) 2 ½ cups Rice Krispies cereal 2 cups chocolate chips (I like dark chocolate)
In a large bowl, cream together the peanut butter, butter, and powdered sugar until smooth. Stir in the cereal.
Roll the mixture into balls and place them on a parchment-lined baking sheet. Chill in the freezer for 20 minutes to firm up.
In a microwave-safe bowl, add the chocolate chips. Microwave in 30-second intervals, stirring each time, until the chocolate is melted.
Dip the peanut butter balls into the melted chocolate and place them back on the cookie sheet. Chill until firm.
Store in the fridge for a week or in the freezer for a few months.
