Ingredients

  • 1 cup peanut butter
  • 1 cup powdered sugar
  • ¼ cup butter (softened)
  • 2 ½ cups Rice Krispies cereal
  • 2 cups chocolate chips (I like dark chocolate)

Instructions

  • In a large bowl, cream together the peanut butter, butter, and powdered sugar until smooth. Stir in the cereal.
  • Roll the mixture into balls and place them on a parchment-lined baking sheet. Chill in the freezer for 20 minutes to firm up.
  • In a microwave-safe bowl, add the chocolate chips. Microwave in 30-second intervals, stirring each time, until the chocolate is melted.
  • Dip the peanut butter balls into the melted chocolate and place them back on the cookie sheet. Chill until firm.
  • Store in the fridge for a week or in the freezer for a few months.
