    Ube Overnight Oats

    These Ube Overnight Oats have become my latest obsession. I love overnight oats in general because they are easy to make and a great way to add extra fiber to your diet. But these are next level. Add some fresh strawberries and you got yourself a mighty breakfast.

    Key Ingredients

    Ube halaya: This is a type of jam made from purple yams. You absolutely need this for the ube flavor. It is very sweet so you do not need to add any additional sugar for this recipe. You can buy it at most Asian grocery stores in the Southeast Asian section.

    Ube extract: This is optional but gives the overnight oats a purple color. Any time you see ube extract in a recipe, it is mainly used for color. Ube extract is a little hard to find in grocery stores. If you live in the US, you can buy it at some Japanese or Filipino grocery stores. In Canada, usually our only option is buying off Amazon. But it's optional, so don't worry too much if you can't find it.

    Greek yogurt: I really like Greek yogurt in this because it balances the sweetness from the uba halaya. Get the plain yogurt with no flavoring. Most other flavors will have sugar added and we don't need the extra sugar because the halaya is already very sweet.

    Coconut milk: This is a classic pairing for ube desserts. I like my breakfasts to be lighter so I'm using light coconut milk.

    Strawberries: I love adding fruit to overnight oats, otherwise, it doesn't have enough variety of flavors for me. I'm using strawberries today, but you can use whatever fruit you want. Other great options I typically use are mangos, peaches, and bananas.

    Difference in color with ube extract

    I wanted to demonstrate the difference in color when you add ube extract. On the left is before adding the extract, and on the right is after. As you can see, almost all the color comes from the extract.

    A little goes a long way. I only used half a teaspoon. If you ever see a recipe that does not use extract and the result is still purple, it was 100% made with Photoshop or post-production editing to give it the purple color.

    Ube Overnight Oats

    My latest obsession is ube overnight oats. I have tried so many flavors but this has to be one of my favorites. Fresh strawberries are mandatory to bring a bit of freshness. Hope you enjoy it as much as I did!

    Ingredients
      

    • ⅓ cup ube halaya (ube jam)
    • ½ cup Greek yogurt
    • 1 ¼ cups whole rolled oats (see notes)
    • 1 ½ cups milk (or any other milk)
    • ½ cup coconut milk
    • ½ teaspoon vanilla extract
    • ½ teaspoon ube extract
    • 1 tablespoon chia seeds

    For serving

    • chopped strawberries

    Instructions
     

    • First, add the ube halaya and Greek yogurt to a medium container and mix until well incorporated. I like to mix these first because the halaya is very thick and it's easier to mix it with the yogurt before adding the milk.
    • Add the rest of the ingredients (except for the strawberries) and refrigerate for at least 6-8 hours. If you're feeling antsy, you might be able to eat it within 4 hours, but I personally let them go for at least 6.
    • Top the oats with strawberries and enjoy!

    Notes

    I like my overnight oats to be slightly more runny. If you prefer it thicker, add an extra 2 tablespoons of oats.
