Ube Overnight Oats

My latest obsession is ube overnight oats. I have tried so many flavors but this has to be one of my favorites. Fresh strawberries are mandatory to bring a bit of freshness. Hope you enjoy it as much as I did!

  • First, add the ube halaya and Greek yogurt to a medium container and mix until well incorporated. I like to mix these first because the halaya is very thick and it's easier to mix it with the yogurt before adding the milk.
  • Add the rest of the ingredients (except for the strawberries) and refrigerate for at least 6-8 hours. If you're feeling antsy, you might be able to eat it within 4 hours, but I personally let them go for at least 6.
  • Top the oats with strawberries and enjoy!

Notes

I like my overnight oats to be slightly more runny. If you prefer it thicker, add an extra 2 tablespoons of oats.
