My latest obsession is ube overnight oats. I have tried so many flavors but this has to be one of my favorites. Fresh strawberries are mandatory to bring a bit of freshness. Hope you enjoy it as much as I did!
First, add the ube halaya and Greek yogurt to a medium container and mix until well incorporated. I like to mix these first because the halaya is very thick and it's easier to mix it with the yogurt before adding the milk.
Add the rest of the ingredients (except for the strawberries) and refrigerate for at least 6-8 hours. If you're feeling antsy, you might be able to eat it within 4 hours, but I personally let them go for at least 6.
Top the oats with strawberries and enjoy!
Notes
I like my overnight oats to be slightly more runny. If you prefer it thicker, add an extra 2 tablespoons of oats.
