Strawberries and spinach are a match made in heaven. I don't know what it is about the combination, but it just works.
This strawberry spinach salad is simple, fresh, and delicious. It's perfect for just about any occasion- whether it's a picnic, barbecue, or just a simple weekday lunch. I actually made it for dinner this week as a healthy option since my wife and I have been eating quite heavily recently. Just last week, we had smash burgers, tortilla pizzas, and we went out to eat at a few new restaurants. This salad was a perfect healthy reset.
What I love about this salad is the sheer amount of spinach - over 6 cups. I dare you to find me another way to eat this much spinach that tastes this good. The only other recipe I know that uses more spinach is creamed spinach, but we all know that one isn't too healthy. So give this recipe a try!
Key Ingredients

Spinach: I recommend using baby spinach, but older spinach will also work. Baby spinach is just more tender.
Strawberries: Add that refreshing sweetness.
Red onions: I know not everyone likes red onions, so feel free to omit them. Or, you can soak the onions in ice water, which will make them milder.
Feta cheese: For that salty, cheesy goodness. Goat cheese works great as well.
Sliced almonds: Add a nice crunch. Pecans work great too.
Dressing: You'll need olive oil, balsamic vinegar, honey, poppy seeds, Dijon mustard, salt, and pepper.
Instructions

STEP 1: Add the dressing ingredients to a small bowl and whisk.

STEP 2: Add all the salad ingredients to a large bowl.

STEP 3: Drizzle on the salad dressing and toss to combine.

Strawberry Spinach Salad
Ingredients
- 6 cups spinach
- 1 ½ cups strawberries (sliced)
- ¼ small red onion (thinly sliced)
- ½ cup crumbled feta cheese
- ⅓ cup sliced almonds
For the dressing
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar (or red wine vinegar)
- 1 tablespoon honey
- 1 tablespoon poppy seeds
- 1 teaspoon Dijon mustard
- salt and pepper (to taste)
Instructions
- In a small bowl, whisk together the dressing ingredients.
- To a large bowl, add the remaining salad ingredients.
- Drizzle the dressing all over and toss to combine.
