    Strawberry Brownies

    Today, I'm going to show you how to make strawberry brownies with cake mix! It only requires a few ingredients and less than 5 minutes of prep. I finished them with a homemade strawberry icing on top.

    About This Recipe

    Warning: These are super addictive! As someone who LOVES strawberries, I can never get enough of these. They're sweet, refreshing, and so indulgent. I've been meaning to post this recipe for a while, but every time I make them...I eat them right away. Turns out being a food blogger requires way more self-control than I have.

    You are going to LOVE this recipe. I first saw these a few years ago when they popped up on my TikTok feed. At first, I thought the idea of a strawberry brownie was kind of silly, but I realized that many viral recipes that I try end up being really good, so I decided to give these a shot. And I'm really glad I did because I actually prefer these over regular brownies now.

    Like other brownie recipes, I've found the secret to making these perfect is to bake them for less time. You want the center to be somewhat "fudgy", which means underbaking them slightly. A longer bake will make them more cakey, as it will dry out the crumb more.

    Key Ingredients

    Strawberry cake mix: For this recipe, you'll need one 15.25-ounce box of strawberry cake mix. My favorite brand is Pilsbury, but today I'm using Duncan Hines. If you can't find strawberry cake mix, you can also use vanilla cake mix, but be sure to add some strawberry extract or strawberry jam to give it the right flavor.

    Eggs: These form the liquid base of the brownies.

    Oil: Any neutral-flavored oil, like vegetable or canola, will work. Coconut oil would also taste great in this recipe.

    Vanilla extract: For warm vanilla flavor.

    For the glaze: You'll need powdered sugar, milk, and strawberry preserves. Strawberry or raspberry jam will also work in place of the strawberry preserves.

    STEP 1: Grease an 8×8-inch or 9×9-inch baking dish, then line the bottom with parchment paper, leaving an overhang on the sides to lift the brownies out later.

    STEP 2: In a large bowl, mix together the strawberry cake mix, eggs, vegetable oil, and vanilla extract until combined. The batter will be quite thick.

    STEP 3: Scrape the batter into the baking dish and flatten the top with a rubber spatula.

    STEP 4: Bake for 20-23 minutes until a toothpick inserted into the center comes out mostly clean. Cool the brownies in the pan for at least 20 minutes.

    STEP 5: In a small bowl, whisk the glaze ingredients together. Spread over the cooled brownies. Once the glaze has set, lift the brownies from the dish and cut into pieces.
