Milk Toast is an easier alternative to French toast. I saw a few videos of it going viral recently, so I decided to try making it myself. It wasn't as rich as I thought it would be, so I'm using half and half instead of milk.
This is such an easy breakfast idea and I'm still a little shocked that it actually works. The idea is very simple. You just put some buttered bread in a pan and pour milk on top of it. The bread soaks up the milk and the outside gets nice and crispy. An easier version of French toast!
The first time I made it, it was not rich enough for me, so today, I'm using half and half instead of milk. But feel free to use milk if you prefer. I remember reading that Alton Brown used half and half in his French toast recipe so it's not as far-fetched as you think.
What bread to use?
I have a strong preference for Asian-style milk bread, but you can use whatever bread you have laying around. Milk bread is made with milk, butter, and eggs so it's fluffier and richer than regular bread.
Unlike regular French toast, I do not like using stale bread for this. The main reason is because we are not fully soaking the bread so you will end up with dry parts.
How to make milk toast?
After you apply the butter and sugar, place the bread in the center of a hot pan. Pour the half and half over the bread and let it overflow over the crust. Be careful not to add too much or else the bread will be soggy. I used only about three tablespoons.
Make sure to move the bread around to soak up the liquid then let it cook for about 2 minutes until the bottom is golden brown. Flip and cook the other side for the same amount of time. The sugar should caramelize and form a crispy coating on the outside.
Some of the milk tends to dry into a thin layer on the pan. It is actually quite flavorful, but I used a paper towel to wipe it off so my pictures will be nicer.
