    Ham and Cheese Scones

    I love all scone recipes, but savory Ham and Cheese Scones are my absolute favorite. Made with smoked ham, cheddar cheese, and green onions, they're flaky, buttery, and so satisfying. Perfect for a savory breakfast option!

    About This Recipe

    As I get older, I find myself choosing savory breakfasts more often than sweet ones. Not because I don't enjoy a sweet breakfast, but because my health probably depends on it- sugar is bad, as they say. And since breakfast is the most important meal of the day, we should start it off right. These Ham and Cheese Scones are the perfect way to do just that.

    This recipe is quick and easy, and requires no resting (some recipes require refrigerating scones, but I've found that to be unnecessary). The scones come out perfectly flaky and tender, with cheesy pockets and savory ham in every bite. I love eating them fresh out of the oven with a bit of butter for extra richness.

    No special equipment is required for this recipe. All you do is mix the ingredients in a bowl, and then press into a disc shape and cut into triangles. For the dough, you don't want to overwork it. Stir the wet ingredients into the flour until the flour is JUST moistened and a soft dough comes together. The less kneading you do, the more flaky and tender they will be.

    Flour: All-purpose flour is all you need for tender scones. Make sure to spoon and level this into your measuring cup to prevent overmeasuring.

    Sugar: A bit of sugar (but not too much) gives the scones a subtle sweetness.

    Baking powder: For giving the scones their fluffiness and rise.

    Salt: To elevate all the flavors.

    Cold butter: I use unsalted butter so that I can control the salt levels by adding my own salt. If you only have salted butter, you can exclude the salt in the recipe.

    Cheddar cheese: I recommend a sharp cheese like cheddar or gruyere that cuts through the rich flavors.

    Ham: This recipe is great for using leftover ham!

    Green onions: For savory and pungent flavor.

    Buttermilk: You can also use heavy cream or whole milk, but buttermilk has the best flavor.

    Egg: Gives richness and tenderness to the scones.

    STEP 1: In a large bowl, whisk together the flour, sugar, baking powder, and salt. Using your fingers, work the cold butter into the dry ingredients until it resembles coarse breadcrumbs. Stir in the ham, cheese, and green onions.

    STEP 2: In a small bowl, combine the buttermilk and egg. Pour over the flour mixture and stir gently until all the flour is moistened and a soft dough forms.

    STEP 3: Transfer the dough to a lightly floured surface. Flatten the dough into an 8 disc about 1 inch thick. Slice into 8 wedges and transfer to the prepared baking sheet.

    Ingredients
      

    • 2 cups all-purpose flour (spooned and levelled)
    • 2 tablespoons sugar
    • 1 tablespoon baking powder
    • ½ teaspoon salt
    • ½ cup cold unsalted butter (cubed)
    • ⅔ cup diced ham
    • 1 cup shredded cheddar cheese
    • 2 tablespoons sliced green onions
    • ½ cup buttermilk (or whole milk)
    • 1 large egg

    Instructions
     

    • Preheat your oven to 400°F and line a large baking sheet with parchment paper.
    • In a large bowl, whisk together the flour, sugar, baking powder, and salt. Using your fingers, work the cold butter into the dry ingredients until it resembles coarse breadcrumbs. Stir in the ham, cheese, and green onions.
